🍰 Plum Dumplings with Caramelized Butter Ice Cream

Ingredients
- butter 170 g
- eggs 8 pcs
- milk 500 ml
- whipping cream 300 ml
- brown sugar 100 g
- vanilla sugar 1 tbsp
- dumplings with plums 800 g
- powdered sugar 1 tbsp
Instructions
- 1. Melt 150 grams of butter in a pot over medium to high heat.
- 2. Let the butter caramelize for about 5 minutes, stirring frequently, until it turns brown.
- 3. Remove the browned butter from the heat and let it cool slightly.
- 4. Separate the eggs and use the egg whites for another purpose.
- 5. Warm milk and whipping cream in another pot over low heat for about 2 minutes.
- 6. Stir in brown sugar and vanilla sugar with a whisk until the sugar has completely dissolved.
- 7. Remove the pot from the heat and let the mixture cool slightly.
- 8. Whisk the egg yolks in a bowl.
- 9. Stir the slightly cooled cream mixture into the egg yolks.
- 10. Pour the egg yolk mixture back into the pot.
- 11. Heat the mixture over low heat, stirring constantly, until it thickens slightly.
- 12. Make sure the egg yolks do not curdle.
- 13. Stir the browned butter into the thickened ice cream base.
- 14. Strain the mixture through a sieve into a bowl.
- 15. Freeze the mixture in a bowl or an ice cream maker for 8 hours.
- 16. Stir the ice cream several times during freezing to keep it creamy.
- 17. Heat 1 tablespoon of butter in a frying pan.
- 18. Fry the plum dumplings in it over medium heat for about 3 minutes until golden brown.
- 19. Dust the dumplings with powdered sugar.
- 20. Serve the dumplings together with the burnt butter ice cream.
