🍰 Plum Walnut Parfait with Honey

Ingredients
- plums 250 g
- apple juice 75 ml
- honey 4 tbsp
- walnut kernels 5 tbsp
- whipping cream 200 g
- eggs 2 pcs
- sugar 30 g
Instructions
- 1. Wash the plums thoroughly.
- 2. Halve the plums and remove the pits.
- 3. Cut the fruit into wedges.
- 4. Place the plum wedges in a pot.
- 5. Pour in the apple juice.
- 6. Stir in one tablespoon of honey.
- 7. Bring the mixture to a boil.
- 8. Reduce the heat to low.
- 9. Cook the plums for about ten minutes until very soft.
- 10. Remove the pot from the heat.
- 11. Let the plum compote cool down completely.
- 12. Heat a frying pan over medium heat.
- 13. Add the walnuts to the dry pan.
- 14. Roast the nuts for about two minutes.
- 15. Remove the walnuts from the pan.
- 16. Let the walnuts cool down.
- 17. Chop the walnuts coarsely.
- 18. Put the cream in a pot.
- 19. Bring the cream to a boil.
- 20. Separate the eggs.
- 21. Use the egg whites for something else.
- 22. Place the egg yolks in a bowl.
- 23. Add three tablespoons of honey.
- 24. Add the sugar.
- 25. Whisk the mixture with a hand mixer and whisk.
- 26. Whisk the mixture until creamy for about four minutes.
- 27. Slowly pour in the hot cream while stirring constantly.
- 28. Pour about 500 milliliters of water into a second pot.
- 29. Bring the water to a boil.
- 30. Place the bowl with the egg cream over the hot water.
- 31. Whisk the cream in the hot water bath.
- 32. Whisk the cream until creamy for about seven minutes.
- 33. Stop when the mixture thickens slightly.
- 34. Remove the bowl from the water bath.
- 35. Let the cream cool down briefly.
- 36. Stir the cream occasionally.
- 37. Stir in the chopped walnuts.
- 38. Line a loaf pan with cling film.
- 39. Fill the mixture into the prepared pan.
- 40. Place the pan in the freezer for about one hour.
- 41. Let the mixture set.
- 42. Stir the mixture once.
- 43. Spread the cooled plum compote on top.
- 44. Drag a fork through the layers to create short lines.
- 45. Marble the layers briefly.
- 46. Freeze the parfait for at least six hours.
- 47. You can also freeze it overnight.
- 48. Turn out the parfait from the pan before serving.
- 49. Remove the cling film.
- 50. Cut the parfait into pieces.
- 51. Enjoy your meal!
