🍰 Plum Tiramisu

Ingredients
- Plums 500 g
- Red wine, dry 50 ml
- Brown sugar 120 g
- Lemon 1 pc
- Amaretto 2 tbsp
- Quark 40% fat in total 500 g
- Vanilla sugar 20 g
- Whipping cream 100 g
- Ladyfingers 100 g
- Almonds, sliced 2 tbsp
Instructions
- 1. Wash the plums thoroughly, halve them, remove the pits, and cut them into wedges. In a pot, bring the red wine, 60 g of sugar, and the plums to a boil and simmer for about 5 minutes until they are soft.
- 2. Meanwhile, rinse the lemon under hot water, finely grate about 1 tsp of the zest, halve it, and squeeze out the juice. Season the plums with the lemon zest, 1–2 tsp of lemon juice, and Amaretto, then let them cool.
- 3. In a bowl, mix the quark well with the remaining sugar and vanilla sugar. In a tall container, whip the cream stiffly using a hand mixer and whisk, then gently fold it into the quark mixture.
- 4. Line a rectangular dish with the ladyfingers, then distribute the plums along with the liquid over them. Spread the quark cream evenly over the top and cover the tiramisu, placing it in the refrigerator for at least 1 hour.
- 5. Heat a pan over medium heat and toast the almond slices without fat for about 2 minutes, then let them cool. Before serving, sprinkle the plum tiramisu with the toasted almonds. Enjoy your meal!
