🍰 Crispy Plum Strudel with Creamy Vanilla Sauce

Ingredients
- Peach plums 800 g
- Organic lemons 1 pc.
- Butter 5 tbsp
- Breadcrumbs 2 tbsp
- Hazelnut kernels, ground 30 g
- Sugar 8 tbsp
- Cinnamon 0.25 tsp
- Puff pastry 1 pc.
- Vanilla pod 1 pc.
- Milk 330 ml
- Cornstarch 1 tsp
Instructions
- 1. Preheat the oven to 200 degrees Celsius with fan setting.
- 2. Wash the plums thoroughly.
- 3. Remove the pits from the plums.
- 4. Cut the plums into quarters.
- 5. Rinse the lemon under hot water.
- 6. Finely grate about one teaspoon of the lemon zest.
- 7. Place the plum pieces into a bowl.
- 8. Mix the plums with the lemon zest.
- 9. Heat the butter in a frying pan over medium heat.
- 10. Add the breadcrumbs to the pan.
- 11. Add the hazelnuts.
- 12. Add five tablespoons of sugar to the pan.
- 13. Sprinkle cinnamon over the mixture.
- 14. Toast the mixture for about two minutes.
- 15. Remove the pan from the heat.
- 16. Let the filling cool down slightly.
- 17. Unroll the puff pastry onto a kitchen towel.
- 18. Spread the butter-nut mixture over the front third of the pastry.
- 19. Place the plum pieces on top of the filling.
- 20. Leave a border of three centimeters on both the left and right sides.
- 21. Fold the side borders over the filling.
- 22. Roll the strudel tightly using the kitchen towel.
- 23. Line a baking tray with baking paper.
- 24. Place the strudel on the tray with the seam facing down.
- 25. Bake the strudel in the oven for 30 to 35 minutes.
- 26. Remove the strudel when it is golden brown.
- 27. Slice the vanilla pod lengthwise.
- 28. Scrape out the vanilla pod seeds with a knife.
- 29. Heat a pot over medium temperature.
- 30. Pour 300 milliliters of milk into the pot.
- 31. Add the vanilla seeds to the milk.
- 32. Add the empty vanilla pod to the milk.
- 33. Add three tablespoons of sugar to the milk.
- 34. Bring the milk to a boil.
- 35. Remove the pot from the heat.
- 36. Cover the pot.
- 37. Let the milk steep for 15 minutes.
- 38. Remove the vanilla pod from the milk.
- 39. Bring the milk to a boil again.
- 40. Pour three tablespoons of milk into a separate bowl.
- 41. Mix the starch with the cold milk until smooth.
- 42. Pour the starch-milk mixture into the hot vanilla milk.
- 43. Simmer the sauce for two minutes.
- 44. Let the vanilla sauce cool down.
- 45. Take the strudel out of the oven.
- 46. Let the strudel cool down slightly.
- 47. Serve the strudel lukewarm with the vanilla sauce.
