  3. 3. Remove the pits from the plums.
  4. 4. Cut the plums into quarters.
  5. 5. Rinse the lemon under hot water.
  6. 6. Finely grate about one teaspoon of the lemon zest.
  7. 7. Place the plum pieces into a bowl.
  8. 8. Mix the plums with the lemon zest.
  9. 9. Heat the butter in a frying pan over medium heat.
  10. 10. Add the breadcrumbs to the pan.
  11. 11. Add the hazelnuts.
  12. 12. Add five tablespoons of sugar to the pan.
  13. 13. Sprinkle cinnamon over the mixture.
  14. 14. Toast the mixture for about two minutes.
  15. 15. Remove the pan from the heat.
  16. 16. Let the filling cool down slightly.
  17. 17. Unroll the puff pastry onto a kitchen towel.
  18. 18. Spread the butter-nut mixture over the front third of the pastry.
  19. 19. Place the plum pieces on top of the filling.
  20. 20. Leave a border of three centimeters on both the left and right sides.
  21. 21. Fold the side borders over the filling.
  22. 22. Roll the strudel tightly using the kitchen towel.
  23. 23. Line a baking tray with baking paper.
  24. 24. Place the strudel on the tray with the seam facing down.
  25. 25. Bake the strudel in the oven for 30 to 35 minutes.
  26. 26. Remove the strudel when it is golden brown.
  27. 27. Slice the vanilla pod lengthwise.
  28. 28. Scrape out the vanilla pod seeds with a knife.
  29. 29. Heat a pot over medium temperature.
  30. 30. Pour 300 milliliters of milk into the pot.
  31. 31. Add the vanilla seeds to the milk.
  32. 32. Add the empty vanilla pod to the milk.
  33. 33. Add three tablespoons of sugar to the milk.
  34. 34. Bring the milk to a boil.
  35. 35. Remove the pot from the heat.
  36. 36. Cover the pot.
  37. 37. Let the milk steep for 15 minutes.
  38. 38. Remove the vanilla pod from the milk.
  39. 39. Bring the milk to a boil again.
  40. 40. Pour three tablespoons of milk into a separate bowl.
  41. 41. Mix the starch with the cold milk until smooth.
  42. 42. Pour the starch-milk mixture into the hot vanilla milk.
  43. 43. Simmer the sauce for two minutes.
  44. 44. Let the vanilla sauce cool down.
  45. 45. Take the strudel out of the oven.
  46. 46. Let the strudel cool down slightly.
  47. 47. Serve the strudel lukewarm with the vanilla sauce.
