🍰 Fluffy Plum Schmarrn with Walnuts

Ingredients
- walnut kernels 5 tbsp
- plums 400 g
- eggs 4 pcs
- sugar 60 g
- salt pinch
- wheat flour, Type 405 250 g
- milk 300 ml
- butter 3 tbsp
- powdered sugar 1 tbsp
Instructions
- 1. Take the walnuts out of the package and chop them into small pieces.
- 2. Rinse the plums under running water.
- 3. Cut the plums in half and remove the pits.
- 4. Turn on the oven and set it to 80 degrees Celsius.
- 5. Use the top and bottom heat setting for baking.
- 6. Separate the eggs so that you have the egg whites and yolks in separate bowls.
- 7. Place the egg whites into a clean bowl.
- 8. Beat the egg whites with a hand mixer and whisk attachment until they are firm and stiff.
- 9. Take a second bowl and place the egg yolks inside.
- 10. Add sugar and a pinch of salt to the egg yolks.
- 11. Mix the yolk mixture with the mixer until it becomes light and frothy.
- 12. Add flour and milk to the yolk mixture in alternating additions.
- 13. Continue stirring until the batter is smooth and free of lumps.
- 14. Take the beaten egg whites and gently fold them into the batter.
- 15. Take a frying pan and add one tablespoon of butter.
- 16. Turn the stove burner to medium heat and let the butter melt.
- 17. Take half of the halved plums and place them in the hot pan.
- 18. Sauté the plums for about one to two minutes.
- 19. Sprinkle half of the chopped walnuts over the plums.
- 20. Pour half of the finished batter evenly over the plums and walnuts.
- 21. Bake the schmarrn for about three minutes until the bottom is golden brown.
- 22. Carefully flip the schmarrn so that the other side is facing down.
- 23. Bake the other side for another three minutes.
- 24. Take two forks and roughly tear the schmarrn into pieces.
- 25. Place the finished schmarrn pieces in the preheated oven to keep them warm.
- 26. Repeat steps 15 to 25 with the remaining butter, plums, walnuts, and batter.
- 27. Dust the finished plum schmarrn with powdered sugar.
- 28. Serve the schmarrn immediately and enjoy it.
