🍰 Plum-Orange Compote with Vanilla Ice Cream and Cookie Crumble

Ingredients
- Plums 500 g
- Oranges 2 pcs
- Sugar 2 tbsp
- Vanilla Sugar 2 tsp
- Cornstarch 1 tbsp
- Mint, fresh 10 g
- Vanilla Crescents 8 pcs
- Vanilla Ice Cream 8 tbsp
Instructions
- 1. Thoroughly wash the plums under running water.
- 2. Halve the plums and remove the pits.
- 3. Cut the plum halves into thin wedges.
- 4. Halve one orange and squeeze out the juice.
- 5. Peel the second orange completely until no white pith remains.
- 6. Cut out the orange segments using a V-shaped knife motion to release them from the membranes.
- 7. Catch the juice released from the orange segments.
- 8. Place the plum wedges, sugar, vanilla sugar, and orange juice into a pot.
- 9. Bring the mixture to a boil.
- 10. Let the compote simmer gently for about five minutes until soft.
- 11. Mix the starch with a little water in a small bowl.
- 12. Stir the starch mixture into the plum compote.
- 13. Continue to simmer the compote for another minute.
- 14. Remove the pot from the heat once the compote has thickened slightly.
- 15. Let the compote cool down to lukewarm.
- 16. Wash the mint thoroughly.
- 17. Shake the mint dry.
- 18. Pluck the mint leaves from the stems.
- 19. Place the vanilla crescent cookies into a freezer bag.
- 20. Crush the cookies roughly inside the bag.
- 21. Gently fold the orange segments into the cooled plum compote.
- 22. Divide the compote mixture among small bowls.
- 23. Place a scoop of vanilla ice cream on each bowl.
- 24. Sprinkle the crushed cookies over the ice cream.
- 25. Garnish the dessert with the fresh mint leaves.
