  1. 1. Thoroughly wash the plums under running water.
  2. 2. Halve the plums and remove the pits.
  3. 3. Cut the plum halves into thin wedges.
  4. 4. Halve one orange and squeeze out the juice.
  5. 5. Peel the second orange completely until no white pith remains.
  6. 6. Cut out the orange segments using a V-shaped knife motion to release them from the membranes.
  7. 7. Catch the juice released from the orange segments.
  8. 8. Place the plum wedges, sugar, vanilla sugar, and orange juice into a pot.
  9. 9. Bring the mixture to a boil.
  10. 10. Let the compote simmer gently for about five minutes until soft.
  11. 11. Mix the starch with a little water in a small bowl.
  12. 12. Stir the starch mixture into the plum compote.
  13. 13. Continue to simmer the compote for another minute.
  14. 14. Remove the pot from the heat once the compote has thickened slightly.
  15. 15. Let the compote cool down to lukewarm.
  16. 16. Wash the mint thoroughly.
  17. 17. Shake the mint dry.
  18. 18. Pluck the mint leaves from the stems.
  19. 19. Place the vanilla crescent cookies into a freezer bag.
  20. 20. Crush the cookies roughly inside the bag.
  21. 21. Gently fold the orange segments into the cooled plum compote.
  22. 22. Divide the compote mixture among small bowls.
  23. 23. Place a scoop of vanilla ice cream on each bowl.
  24. 24. Sprinkle the crushed cookies over the ice cream.
  25. 25. Garnish the dessert with the fresh mint leaves.
