Ingredients
- yeast, fresh 0.5 pcs
- milk 200 ml
- sugar 160 g
- almonds, ground 200 g
- wheat flour, Type 405 350 g
- eggs 1 pcs
- salt pinch
- plums 800 g
- cinnamon pinch
- butter 100 g
Instructions
- 1. Put yeast, milk, and 10 grams of sugar into a bowl.
- 2. Mix the mixture at 37 degrees Celsius and speed 1 for 2 minutes.
- 3. Add ground almonds, 200 grams of flour, one egg, 50 grams of sugar, and a pinch of salt.
- 4. Process everything for 40 seconds at speed 6 to form a smooth dough.
- 5. Transfer the dough into a clean bowl.
- 6. Let the dough rise, covered, in a warm place for about 1 hour.
- 7. Wash the plums under running water.
- 8. Halve the plums and remove the pits.
- 9. Cut the plum halves into wedges.
- 10. Place the plum wedges into a bowl.
- 11. Sprinkle the plums with 3 tablespoons of sugar and cinnamon.
- 12. Let the plums sit with the spices for a short time.
- 13. Put 150 grams of flour and 100 grams of sugar into the food processor bowl.
- 14. Add cold butter pieces.
- 15. Process the ingredients for 90 seconds in kneading mode to form fine crumbs.
- 16. Preheat the oven to 180 degrees Celsius with top and bottom heat.
- 17. Sprinkle some flour onto a clean work surface.
- 18. Take the dough out of the bowl and knead it briefly.
- 19. Roll out the dough into a rectangle.
- 20. Line a baking tray with baking paper.
- 21. Place the dough on the prepared baking tray.
- 22. Let the dough rise again for about 10 minutes.
- 23. Distribute the marinated plums evenly over the dough.
- 24. Sprinkle the prepared almond crumbs over the plums.
- 25. Place the baking tray in the oven for 35 to 40 minutes.
- 26. Carefully remove the cake from the oven.
- 27. Let the cake cool down briefly.
- 28. Cut the cake into pieces.
- 29. Serve the cake and enjoy!
