  1. 1. Wash the plums thoroughly, halve them, remove the stones, and cut into small pieces. In a pot, mix 1 kg of the prepared fruit with sugar for jam and let it sit for about 3 hours.
  2. 2. Cut the lemon in half and squeeze out the juice. Peel the ginger and chop it finely. Add the lemon juice and ginger to the plums and bring the mixture to a boil while stirring occasionally. Then simmer gently for about 4 minutes, stirring constantly.
  3. 3. For the setting test, place a teaspoon of the jam on a cold plate. If the jam sets after about 1 minute, it is ready for further processing. If necessary, extend the cooking time by 1–2 minutes and repeat the setting test.
  4. 4. Carefully remove the foam that forms with a spoon. Add the gin, stir well, and fill the hot plum-ginger jam with gin into clean screw-top jars. Seal the jars and let them cool upside down. Enjoy!
