🍰 Juicy Plum Cupcakes with Cream Cheese Frosting

Ingredients
- Plums 400 g
- Butter 220 g
- Sugar 160 g
- Salt Pinch
- Vanilla Sugar 1 tsp
- Eggs 2 pcs
- Wheat flour, Type 405 200 g
- Baking powder 1 tsp
- Milk 75 ml
- Cream cheese, plain 150 g
- Powdered sugar 100 g
Instructions
- 1. Preheat your oven to 175 degrees Celsius using top and bottom heat.
- 2. Rinse 300 grams of plums under running water.
- 3. Remove the pits from the plums.
- 4. Cut the fruit flesh into small cubes.
- 5. Place 120 grams of soft butter into a large mixing bowl.
- 6. Add sugar, a pinch of salt, and vanilla sugar to the butter.
- 7. Beat the mixture with a hand mixer and whisk until creamy.
- 8. Crack the eggs one by one and add them to the batter sequentially.
- 9. Add flour, baking powder, and milk to the bowl.
- 10. Stir everything until you have a smooth batter.
- 11. Gently fold the diced plums into the batter.
- 12. Grease muffin cups and fill them with the batter.
- 13. Bake the cupcakes in the oven for 30 to 35 minutes.
- 14. Take them out when they are lightly golden brown.
- 15. Let the cupcakes cool on a wire rack.
- 16. Wash the remaining plums for decoration.
- 17. Halve the plums and remove the pits.
- 18. Cut the fruit flesh into thin wedges.
- 19. Place cream cheese and the remaining soft butter into a clean bowl.
- 20. Beat the mixture with the hand mixer until creamy.
- 21. Sift powdered sugar into the bowl.
- 22. Continue to beat the cream for 2 to 3 minutes.
- 23. Put the cream into a piping bag or use a spoon.
- 24. Spread the cream over the cooled cupcakes.
- 25. Garnish the cupcakes with the plum wedges.
