  1. 1. Wash the peaches thoroughly, halve them, remove the pit, and cut into large pieces. Bring to a boil in a pot with 100 ml white wine, then simmer covered over medium heat for about 8–10 minutes until the fruit is soft and releases liquid.
  2. 2. Line a sieve with a clean kitchen towel, pour in the fruit along with the liquid, and let it drip. Squeeze the fruit well and measure the juice. Halve one lemon and squeeze out the juice.
  3. 3. Add the lemon juice and the remaining wine to the juice to bring the total volume to 750 ml. Mix with the jam sugar in a pot. Bring to a boil over medium heat, stirring occasionally, then boil vigorously for about 3 minutes.
  4. 4. Immediately fill the jelly into previously rinsed with hot water and clean jars (approx. 250 ml) to the brim, seal well, and let cool. Enjoy your meal!
