  2. 2. Wash the peaches thoroughly.
  3. 3. Cut the peaches in half.
  4. 4. Remove the pits from the peach halves.
  5. 5. Cut the peach halves into thin wedges.
  6. 6. Place the peach wedges into a bowl.
  7. 7. Sprinkle two tablespoons of sugar over the peaches.
  8. 8. Gently mix the peaches and sugar together.
  9. 9. Wash the mint leaves.
  10. 10. Dry the mint leaves thoroughly.
  11. 11. Pluck the mint leaves off the stems.
  12. 12. Roll out the puff pastry flat.
  13. 13. Cut the dough into eight equal squares.
  14. 14. Place the peach wedges onto the dough squares.
  15. 15. Line a baking tray with baking paper.
  16. 16. Place the topped dough pieces onto the tray.
  17. 17. Bake the tartlets in the oven for about 20 minutes.
  18. 18. Mix the crème fraîche in a separate bowl.
  19. 19. Add sugar to the crème fraîche to taste.
