🍰 Peach Cream Cake with Citrus Drink

Ingredients
- eggs 4 pcs
- sugar 210 g
- wheat flour, type 405 350 g
- baking powder 1 packet
- oil 130 ml
- orange soda 170 ml
- peaches from the can 300 g
- whipping cream 500 ml
- vanilla sugar 2 packets
- sour cream 500 g
- cinnamon 1 tsp
Instructions
- 1. Preheat the oven to 180 degrees Celsius with top and bottom heat.
- 2. Beat three eggs and 180 grams of sugar in a bowl with a hand mixer and whisk for about three minutes until creamy.
- 3. Sift flour and baking powder into the egg mixture little by little.
- 4. Stir in oil and the lemonade until the batter is smooth.
- 5. Spread the batter evenly onto a greased baking sheet or in a shallow loaf pan.
- 6. Bake the base in the oven for about 20 minutes until golden brown.
- 7. Let the cake base cool completely on a wire rack.
- 8. Drain the peaches from the can into a sieve.
- 9. Slice the peaches into thin pieces.
- 10. Whip cream with vanilla sugar and two tablespoons of sugar in a tall container until stiff.
- 11. Gently fold the whipped cream into sour cream in a separate bowl.
- 12. Gently fold the peach slices into the cream mixture.
- 13. Spread the sour cream mixture evenly over the cooled cake base.
- 14. Place the cake in the refrigerator for about one hour.
- 15. Mix one tablespoon of sugar with cinnamon in a small dish.
- 16. Dust the cinnamon-sugar mixture over the cake before serving.
- 17. Cut the cake into pieces and serve.
