🍰 Peach Passionfruit Cheesecake

Ingredients
- butter 80 g
- Oat cookies 200 g
- Peach yogurt 500 g
- Yogurt, plain 300 g
- Whipping cream 200 g
- Sugar 80 g
- Eggs 3 pcs
- Passion fruit 3 pcs
Instructions
- 1. Preheat the oven to 180 degrees Celsius with top and bottom heat.
- 2. Melt the butter in a small saucepan over medium heat.
- 3. Place the oat cookies into a freezer bag.
- 4. Crush the cookies roughly using a rolling pin or the bottom of a pan.
- 5. Put the crumbled cookies into a bowl.
- 6. Mix the cookies with the melted butter.
- 7. Line a 26-centimeter springform pan with baking paper.
- 8. Spread the cookie mixture evenly in the pan.
- 9. Press the crust down firmly with a spoon.
- 10. Bake the crust for about 10 minutes in the preheated oven.
- 11. Whisk together peach yogurt, natural yogurt, cream, sugar, and eggs in a separate bowl.
- 12. Stir the mixture until it is creamy and smooth.
- 13. Remove the springform with the crust from the oven.
- 14. Let the pan cool for about 5 minutes.
- 15. Reduce the oven temperature to 160 degrees Celsius with top and bottom heat.
- 16. Pour the yogurt cream over the cooled cookie base.
- 17. Bake the cake for about 30 to 40 minutes.
- 18. The cake is done when the cream is set.
- 19. Turn off the oven and let the cake rest inside for another 10 minutes.
- 20. Remove the cake from the oven.
- 21. Let the cake cool completely on a wire rack.
- 22. Cut the passion fruits in half lengthwise.
- 23. Scoop out the pulp from the shells with a spoon.
- 24. Distribute the fruit pulp evenly over the cooled cake.
- 25. Serve the cake and enjoy it.
