🍰 Peach Almond Parfait

Ingredients
- Peaches 6 pcs
- Whipping cream 200 g
- Crème fraîche 400 g
- Icing sugar 60 g
- Almonds, whole 150 g
- Honey 100 g
Instructions
- 1. Bring about 1 liter of water to a boil in a pot.
- 2. Place 5 peaches in a bowl.
- 3. Pour the boiling water over the fruit.
- 4. Let the peaches sit for a short moment.
- 5. Drain the hot water.
- 6. Rinse the fruit with cold water to stop the cooking process.
- 7. Peel the skin off the peaches.
- 8. Cut the flesh away from the pits.
- 9. Puree the fruit flesh in the bowl.
- 10. Whip 100 g of cream in a bowl until stiff using a hand mixer.
- 11. Mix crème fraîche and powdered sugar well in a separate bowl.
- 12. Gently fold the peach puree into the crème fraîche mixture.
- 13. Gently fold the whipped cream into the mixture.
- 14. Line a loaf pan (25 cm long) with cling film.
- 15. Pour the peach mixture into the pan.
- 16. Freeze the mixture in the freezer for about 90 minutes.
- 17. Chop the almonds coarsely in the meantime.
- 18. Toast the almonds in a pan over medium heat without fat for about 2 minutes.
- 19. Pour 60 g of honey over the toasted almonds.
- 20. Let the almonds caramelize with the honey for about 2 minutes.
- 21. Spread the almonds on a baking sheet lined with baking paper.
- 22. Let the almonds cool down.
- 23. Coarsely crush the cooled almonds.
- 24. Whip the remaining cream in a bowl until stiff.
- 25. Add the remaining honey to the whipped cream.
- 26. Fold the almond brittle into the cream.
- 27. Spread the almond cream over the frozen peach parfait.
- 28. Freeze the parfait for about 5 hours or overnight until the mixture is firm.
- 29. Take the parfait out of the freezer about 10 minutes before serving.
- 30. Let the parfait thaw slightly.
- 31. Wash the remaining peach.
- 32. Halve the peach.
- 33. Remove the pit from the peach.
- 34. Cut the peach into wedges.
- 35. Turn the peach almond parfait out of the pan onto a plate.
- 36. Remove the cling film.
- 37. Decorate the parfait with the peach wedges.
- 38. Serve the parfait.
