  1. 1. Bring about 1 liter of water to a boil in a pot.
  2. 2. Place 5 peaches in a bowl.
  3. 3. Pour the boiling water over the fruit.
  4. 4. Let the peaches sit for a short moment.
  5. 5. Drain the hot water.
  6. 6. Rinse the fruit with cold water to stop the cooking process.
  7. 7. Peel the skin off the peaches.
  8. 8. Cut the flesh away from the pits.
  9. 9. Puree the fruit flesh in the bowl.
  10. 10. Whip 100 g of cream in a bowl until stiff using a hand mixer.
  11. 11. Mix crème fraîche and powdered sugar well in a separate bowl.
  12. 12. Gently fold the peach puree into the crème fraîche mixture.
  13. 13. Gently fold the whipped cream into the mixture.
  14. 14. Line a loaf pan (25 cm long) with cling film.
  15. 15. Pour the peach mixture into the pan.
  16. 16. Freeze the mixture in the freezer for about 90 minutes.
  17. 17. Chop the almonds coarsely in the meantime.
  18. 18. Toast the almonds in a pan over medium heat without fat for about 2 minutes.
  19. 19. Pour 60 g of honey over the toasted almonds.
  20. 20. Let the almonds caramelize with the honey for about 2 minutes.
  21. 21. Spread the almonds on a baking sheet lined with baking paper.
  22. 22. Let the almonds cool down.
  23. 23. Coarsely crush the cooled almonds.
  24. 24. Whip the remaining cream in a bowl until stiff.
  25. 25. Add the remaining honey to the whipped cream.
  26. 26. Fold the almond brittle into the cream.
  27. 27. Spread the almond cream over the frozen peach parfait.
  28. 28. Freeze the parfait for about 5 hours or overnight until the mixture is firm.
  29. 29. Take the parfait out of the freezer about 10 minutes before serving.
  30. 30. Let the parfait thaw slightly.
  31. 31. Wash the remaining peach.
  32. 32. Halve the peach.
  33. 33. Remove the pit from the peach.
  34. 34. Cut the peach into wedges.
  35. 35. Turn the peach almond parfait out of the pan onto a plate.
  36. 36. Remove the cling film.
  37. 37. Decorate the parfait with the peach wedges.
  38. 38. Serve the parfait.
