🍰 Peach Caramel Quark Dessert with Crispy Tuiles

Ingredients
- butter 50 g
- eggs 1 pcs
- powdered sugar 150 g
- wheat flour, Type 405 60 g
- whipping cream 100 g
- peaches 3 pcs
- quark 20 % Fett i.Tr. 500 g
- yogurt, plain 150 g
Instructions
- 1. Melt 20 grams of butter in a small pot over low heat.
- 2. Separate an egg and put the egg white into a bowl.
- 3. Whip the egg white stiff using a hand mixer with the whisk attachment.
- 4. Gradually stir in 30 grams of powdered sugar into the egg whites.
- 5. Gently fold flour and the melted butter into the batter.
- 6. Let the dough rest in the refrigerator for about 30 minutes.
- 7. Preheat the oven to 200 degrees Celsius with top and bottom heat.
- 8. Roll out the dough thinly using a rolling pin.
- 9. Cut out circles with a diameter of about 7 centimeters.
- 10. Place the dough circles with enough space between them on a baking sheet lined with baking paper.
- 11. Bake the circles in the oven for about 5 minutes until golden brown.
- 12. Caramelize 60 grams of powdered sugar in a pot over medium heat.
- 13. Add the remaining butter to the caramel and stir it in.
- 14. Deglaze the caramel with cream.
- 15. Simmer the sauce for about 2 minutes on low heat.
- 16. Continue cooking until the sugar is completely dissolved.
- 17. Let the caramel sauce cool down.
- 18. Pour hot water over the peaches.
- 19. Peel the skin off the peaches.
- 20. Halve the peaches and remove the pits.
- 21. Cut the peaches into small cubes.
- 22. Mix quark, yogurt, and the remaining powdered sugar in a bowl.
- 23. Stir in the caramel sauce, reserving 2 to 3 tablespoons.
- 24. Gently fold the peach cubes into the quark mixture.
- 25. Fill the mixture into small bowls or glasses.
- 26. Drizzle the desserts with the remaining caramel sauce.
- 27. Serve the peach caramel quark dessert together with the crispy tuiles.
