  3. 3. Whip the egg white stiff using a hand mixer with the whisk attachment.
  4. 4. Gradually stir in 30 grams of powdered sugar into the egg whites.
  5. 5. Gently fold flour and the melted butter into the batter.
  6. 6. Let the dough rest in the refrigerator for about 30 minutes.
  7. 7. Preheat the oven to 200 degrees Celsius with top and bottom heat.
  8. 8. Roll out the dough thinly using a rolling pin.
  9. 9. Cut out circles with a diameter of about 7 centimeters.
  10. 10. Place the dough circles with enough space between them on a baking sheet lined with baking paper.
  11. 11. Bake the circles in the oven for about 5 minutes until golden brown.
  12. 12. Caramelize 60 grams of powdered sugar in a pot over medium heat.
  13. 13. Add the remaining butter to the caramel and stir it in.
  14. 14. Deglaze the caramel with cream.
  15. 15. Simmer the sauce for about 2 minutes on low heat.
  16. 16. Continue cooking until the sugar is completely dissolved.

  18. 18. Pour hot water over the peaches.
  19. 19. Peel the skin off the peaches.
  20. 20. Halve the peaches and remove the pits.
  21. 21. Cut the peaches into small cubes.
  22. 22. Mix quark, yogurt, and the remaining powdered sugar in a bowl.
  23. 23. Stir in the caramel sauce, reserving 2 to 3 tablespoons.
  24. 24. Gently fold the peach cubes into the quark mixture.
