🍰 Crispy Peach Pastry Pockets

Ingredients
- peaches from can 400 g
- eggs 2 pcs.
- quark 40% fat in dry matter 125 g
- red currant jam 2 tbsp
- puff pastry 2 pcs.
- vanilla ice cream 8 tbsp
Instructions
- 1. Preheat the oven to 180 degrees Celsius with fan.
- 2. Let the peaches drain well in a sieve.
- 3. Separate the eggs and use the egg whites for something else.
- 4. Mix the egg yolk with the quark and jam in a bowl until smooth.
- 5. Roll out the puff pastry flat.
- 6. Cut the pastry into 6 equal squares.
- 7. Fold the four corners of one pastry square towards the center.
- 8. Place a spoonful of the quark and jam mixture in the center.
- 9. Place half a peach slice on top of the filling.
- 10. Place the finished pastry pockets on a baking tray lined with baking paper.
- 11. Brush the edges of the pastry pockets with the remaining egg yolk.
- 12. Bake the peach pastries in the oven for about 18 minutes.
- 13. Take the pastries out of the oven.
- 14. Serve them lukewarm with a scoop of vanilla ice cream.
