  1. 1. Preheat the oven to 180 degrees Celsius with fan.
  2. 2. Let the peaches drain well in a sieve.
  3. 3. Separate the eggs and use the egg whites for something else.
  4. 4. Mix the egg yolk with the quark and jam in a bowl until smooth.
  5. 5. Roll out the puff pastry flat.
  6. 6. Cut the pastry into 6 equal squares.
  7. 7. Fold the four corners of one pastry square towards the center.
  8. 8. Place a spoonful of the quark and jam mixture in the center.
  9. 9. Place half a peach slice on top of the filling.
  10. 10. Place the finished pastry pockets on a baking tray lined with baking paper.
  11. 11. Brush the edges of the pastry pockets with the remaining egg yolk.
  12. 12. Bake the peach pastries in the oven for about 18 minutes.
  13. 13. Take the pastries out of the oven.
  14. 14. Serve them lukewarm with a scoop of vanilla ice cream.
