  1. 1. Clean the chanterelles with a kitchen towel if necessary.
  2. 2. Halve the onion, peel it, and cut it into small cubes.
  3. 3. Wash the parsley, shake it dry, and separate the leaves from the stems.
  4. 4. Finely chop the parsley leaves.
  5. 5. Drain the mozzarella in a sieve.
  6. 6. Cut the mozzarella into pieces about 2 cm in size.
  7. 7. Whisk the eggs in a bowl.
  8. 8. Pour the milk into the eggs.
  9. 9. Season the egg mixture with salt and pepper.
  10. 10. Heat the butter in a frying pan over high heat.
  11. 11. Fry the onions and chanterelles together for about 3 minutes.
  12. 12. Pour the egg mixture into the pan with the chanterelles.
  13. 13. Cook the omelette over low heat for about 5 minutes.
  14. 14. Distribute the mozzarella pieces over the omelette.
  15. 15. Cover the pan and let the omelette cook for another 7 minutes.
  16. 16. Cut the finished omelette into portions.
