🍳 Crispy Ciabatta with Chanterelles and Skyr

Ingredients
- chanterelles 500 g
- onions, yellow 1 pcs
- garlic cloves 1 pcs
- parsley, fresh 15 g
- lemons 1 tbsp
- ciabatta bread 1 pcs
- butter 3 tbsp
- salt pinch
- pepper, black ground pinch
- skyr, plain 100 g
Instructions
- 1. Clean the chanterelles if necessary using a kitchen towel. Cut large mushrooms in half.
- 2. Halve an onion, peel it, and cut it into small cubes.
- 3. Peel a garlic clove and chop it finely.
- 4. Wash fresh parsley, shake off excess water, and pick the leaves off the stems.
- 5. Wash a lemon and grate about one teaspoon of the zest.
- 6. Squeeze the halved lemon to extract the juice.
- 7. Slice the ciabatta bread into pieces about one centimeter thick.
- 8. Heat a pan and melt one tablespoon of butter over medium heat.
- 9. Toast the ciabatta slices on both sides for about two minutes until golden brown.
- 10. Heat the remaining butter in the same pan over medium heat.
- 11. Add the onion cubes and chopped garlic to the pan and sauté for about one minute.
- 12. Add the chanterelles and cook them for about three minutes.
- 13. Season the mushroom mixture with salt and pepper to taste.
- 14. Mix skyr in a bowl with one tablespoon of lemon juice and the lemon zest.
- 15. Spread the skyr cream evenly over the toasted ciabatta slices.
- 16. Place the fried chanterelles on top of the cream-covered slices.
- 17. Sprinkle the crostini with coarse pepper and fresh parsley.
- 18. Serve the crostini immediately while warm.
