  1. 1. Peel the apples and remove the core.
  2. 2. Slice the apples into thin rounds.
  3. 3. Wash the plums thoroughly.
  4. 4. Halve the plums and remove the pits.
  5. 5. Cut a lemon in half.
  6. 6. Squeeze the juice out of the lemon.
  7. 7. Pour the apple juice and lemon juice into a pot.
  8. 8. Heat the liquid over medium heat.
  9. 9. Add the honey to the pot.
  10. 10. Add the prepared apples and plums to the pot.
  11. 11. Cover the pot.
  12. 12. Let the fruits steep for about 5 minutes.
  13. 13. Put the eggs, milk, and salt into a bowl.
  14. 14. Mix the ingredients well together.
  15. 15. Sift the flour and baking powder into the bowl.
  16. 16. Stir everything together into a slightly thick batter.
  17. 17. Heat 1 tablespoon of oil in a non-stick pan over medium heat.
  18. 18. Pour a ladle of batter into the hot pan.
  19. 19. Tilt the pan to spread the batter thinly.
  20. 20. Bake the pancake for about 1 to 2 minutes until golden brown.
  21. 21. Flip the pancake when it becomes firm and releases from the bottom.
  22. 22. Fry the other side for another 1 minute until golden brown.
  23. 23. Remove the finished pancake from the pan.
  24. 24. Repeat the process until all the batter is used up.
  25. 25. Stack the pancakes alternately with apple slices and plums to form four towers.
  26. 26. Drizzle some honey over the towers as desired.
  27. 27. Serve the pancake tower together with the remaining compote.
