🍰 Apple-Plum Pancake Tower

Ingredients
- Apples, red 3 pcs.
- Plums 300 g
- Lemons 1 pcs.
- Apple juice 100 ml
- Honey 70 g
- Eggs 2 pcs.
- Milk 300 ml
- Salt pinch
- Wheat flour, Type 405 225 g
- Baking powder 1 tsp
- Rapeseed oil 2 tbsp
Instructions
- 1. Peel the apples and remove the core.
- 2. Slice the apples into thin rounds.
- 3. Wash the plums thoroughly.
- 4. Halve the plums and remove the pits.
- 5. Cut a lemon in half.
- 6. Squeeze the juice out of the lemon.
- 7. Pour the apple juice and lemon juice into a pot.
- 8. Heat the liquid over medium heat.
- 9. Add the honey to the pot.
- 10. Add the prepared apples and plums to the pot.
- 11. Cover the pot.
- 12. Let the fruits steep for about 5 minutes.
- 13. Put the eggs, milk, and salt into a bowl.
- 14. Mix the ingredients well together.
- 15. Sift the flour and baking powder into the bowl.
- 16. Stir everything together into a slightly thick batter.
- 17. Heat 1 tablespoon of oil in a non-stick pan over medium heat.
- 18. Pour a ladle of batter into the hot pan.
- 19. Tilt the pan to spread the batter thinly.
- 20. Bake the pancake for about 1 to 2 minutes until golden brown.
- 21. Flip the pancake when it becomes firm and releases from the bottom.
- 22. Fry the other side for another 1 minute until golden brown.
- 23. Remove the finished pancake from the pan.
- 24. Repeat the process until all the batter is used up.
- 25. Stack the pancakes alternately with apple slices and plums to form four towers.
- 26. Drizzle some honey over the towers as desired.
- 27. Serve the pancake tower together with the remaining compote.
