Ingredients
- Eggs 2 pcs.
- Wheat flour, Type 405 200 g
- Salt pinch
- Milk 400 ml
- Leaf spinach 400 g
- Garlic cloves 2 pcs.
- Feta 200 g
- Olive oil 1 tbsp.
- Pine nuts 50 g
- Raisins 50 g
- Pepper, black ground pinch
- Oil 4 tbsp.
Instructions
- 1. Preheat the oven to 70 degrees Celsius (convection mode).
- 2. Crack the eggs into a bowl and whisk them well.
- 3. Add the flour and salt to the egg mixture.
- 4. Stir in the milk gradually until a smooth, slightly creamy batter forms.
- 5. Wash the spinach thoroughly and let it drain well.
- 6. Peel the garlic and chop it finely.
- 7. Cut the feta cheese into small cubes.
- 8. Heat one tablespoon of olive oil in a pan over medium heat.
- 9. Toast the garlic together with the pine nuts for about one minute.
- 10. Add the spinach and raisins to the pan.
- 11. Let the mixture wilt briefly and season it with salt and pepper.
- 12. Heat one tablespoon of oil in a non-stick pan over medium heat.
- 13. Pour one ladle of batter into the pan and spread it evenly.
- 14. Cook the pancake until the surface is set.
- 15. Carefully flip the pancake and cook it for about one minute more.
- 16. Place the finished pancake on a plate and keep it warm in the oven.
- 17. Repeat the process until all the batter is used up.
- 18. Distribute the spinach and feta mixture evenly over the pancakes.
- 19. Roll up the filled pancakes.
