🍳 Fluffy Pancakes with Fruity Yogurt Topping

Ingredients
- Eggs 4 pcs.
- Wheat flour, Type 405 200 g
- Salt pinch
- Milk 300 ml
- Mango 2 pcs.
- Yogurt, plain 300 g
- Honey 1 tbsp
- Rapeseed oil 4 tbsp
Instructions
- 1. Beat the eggs vigorously in a large bowl until they are frothy.
- 2. Add the flour and a pinch of salt to the eggs and stir the ingredients together roughly.
- 3. Pour the milk slowly and gradually into the bowl.
- 4. Stir the batter with a whisk until it is completely smooth and free of lumps.
- 5. Peel the mango and cut the flesh into small cubes.
- 6. Mix the yogurt with the honey in a separate bowl.
- 7. Fold the mango cubes into the yogurt-honey mixture.
- 8. Heat one tablespoon of oil in a non-stick pan over medium heat.
- 9. Pour a ladle of batter into the hot pan.
- 10. Tilt the pan to spread the batter evenly.
- 11. Cook the pancake for about one to two minutes until it is golden brown.
- 12. Carefully flip the pancake using a spatula.
- 13. Cook the other side for about one minute.
- 14. Remove the finished pancake from the pan and set it aside.
- 15. Repeat the process with the remaining batter until everything is used up.
- 16. Serve the warm pancakes alongside the mango yogurt mixture.
