🍳 Pancakes with Feta and Arugula

Ingredients
- Eggs 4 pcs.
- Wheat flour, Type 405 200 g
- Salt pinch
- Milk 300 ml
- Oil 4 tbsp
- Arugula 100 g
- Feta 200 g
- Honey 1 tsp
- Pepper, black ground pinch
Instructions
- 1. Crack the eggs into a bowl and whisk well. Add flour and salt, then mix everything thoroughly. Gradually pour in the milk while stirring with a whisk until a smooth, slightly thick batter forms.
- 2. Heat 1 tablespoon of oil in a non-stick pan over medium heat. Pour a ladleful of the batter into the hot oil and tilt the pan to spread it evenly.
- 3. Cook the pancake for about 1–2 minutes until golden brown and it starts to firm up and release from the pan. Carefully flip it and cook the other side for another 30 seconds until golden brown. Set the finished pancake aside and repeat with the remaining batter.
- 4. Thoroughly wash the arugula and let it drain. Crumble the feta by hand and season it with honey, salt, and pepper. Fill the pancakes with feta and arugula as desired.
