🍰 Fluffy Pancakes with Sweet Berry Topping

Ingredients
- Eggs 3 pcs
- Milk 200 ml
- Salt pinch
- Wheat flour, Type 405 250 g
- Blueberries, fresh 150 g
- Blackberries, fresh 150 g
- Sugar 6 tbsp
- Orange juice 100 ml
- Oil 4 tbsp
- Yogurt, plain 150 g
Instructions
- 1. Whisk the eggs, milk, and salt together vigorously in a large bowl using a fork or whisk.
- 2. Sift the flour over the liquid to avoid lumps.
- 3. Stir the batter until it is smooth and has a slightly thick consistency.
- 4. Rinse the berries under cold running water and remove any unripe parts.
- 5. Place the sugar in a non-stick pan and melt it over medium heat for about two minutes until it turns into caramel.
- 6. Deglaze the caramel with the orange juice and stir until the sugar has completely dissolved.
- 7. Add the washed berries to the pan and mix them thoroughly with the sauce.
- 8. Remove the pan from the heat and set the compote aside to keep warm.
- 9. Heat one tablespoon of oil in a non-stick pan over medium heat.
- 10. Pour one ladle of batter into the hot pan.
- 11. Tilt the pan slightly to spread the batter evenly across the bottom.
- 12. Cook the pancake for one to two minutes until it is golden brown and releases easily from the pan bottom.
- 13. Carefully flip the pancake using a spatula.
- 14. Cook the second side for about one minute until it is also golden brown.
- 15. Remove the finished pancake from the pan and place it on a plate.
- 16. Repeat this process until all the batter has been used.
- 17. Serve the warm pancakes with the berry compote and a dollop of yogurt on top.
