  1. 1. Whisk the eggs, milk, and salt together vigorously in a large bowl using a fork or whisk.
  2. 2. Sift the flour over the liquid to avoid lumps.
  3. 3. Stir the batter until it is smooth and has a slightly thick consistency.
  4. 4. Rinse the berries under cold running water and remove any unripe parts.
  5. 5. Place the sugar in a non-stick pan and melt it over medium heat for about two minutes until it turns into caramel.
  6. 6. Deglaze the caramel with the orange juice and stir until the sugar has completely dissolved.
  7. 7. Add the washed berries to the pan and mix them thoroughly with the sauce.
  8. 8. Remove the pan from the heat and set the compote aside to keep warm.
  9. 9. Heat one tablespoon of oil in a non-stick pan over medium heat.
  10. 10. Pour one ladle of batter into the hot pan.
  11. 11. Tilt the pan slightly to spread the batter evenly across the bottom.
  12. 12. Cook the pancake for one to two minutes until it is golden brown and releases easily from the pan bottom.
  13. 13. Carefully flip the pancake using a spatula.
  14. 14. Cook the second side for about one minute until it is also golden brown.
  15. 15. Remove the finished pancake from the pan and place it on a plate.
  16. 16. Repeat this process until all the batter has been used.
  17. 17. Serve the warm pancakes with the berry compote and a dollop of yogurt on top.
