🍽️ Herb Köfte with Hummus, Rice, and Fresh Cucumber-Tomato Salad

Ingredients
- garlic cloves 1 pc.
- shallots 2 pc.
- mint, fresh 20 g
- parsley, fresh 40 g
- lemons 1 pc.
- minced meat, mixed 600 g
- salt pinch
- pepper, black ground pinch
- jasmine rice 300 g
- chickpeas from the can 400 g
- sesame, white 3 tbsp
- oil 6 tbsp
- vine tomatoes 6 pc.
- salad cucumbers 1 pc.
- olive oil 2 tbsp
- sugar pinch
Instructions
- 1. Peel the garlic and chop it finely.
- 2. Halve the shallots, peel them, and dice them finely.
- 3. Wash the mint and parsley, dry them, and pick off the leaves.
- 4. Chop the herbs coarsely.
- 5. Wash the lemon and grate about one teaspoon of zest.
- 6. Halve the lemon and squeeze out the juice.
- 7. Place half of the garlic and herbs into a bowl.
- 8. Add the minced meat, shallots, and lemon zest.
- 9. Season with salt and pepper and mix everything well.
- 10. Set the meat mixture aside to let the flavors meld.
- 11. Put the rice in a pot and cover it with 700 milliliters of salted water.
- 12. Bring the water to a boil.
- 13. Reduce the heat to low to medium.
- 14. Cook the rice covered for about 15 minutes.
- 15. Drain the chickpeas and rinse them.
- 16. Drain the chickpeas well.
- 17. Toast the sesame seeds in a pan without fat over medium-high heat for about 3 minutes until golden brown.
- 18. Remove the pan from the heat.
- 19. Add 4 tablespoons of oil and the remaining garlic to the pan.
- 20. Mix the mixture well.
- 21. Place the chickpeas in a tall container.
- 22. Add 3 teaspoons of lemon juice.
- 23. Add the sesame-oil mixture.
- 24. Add 70 milliliters of water.
- 25. Blend the mixture until smooth.
- 26. Season the hummus with salt and pepper.
- 27. Do not wash the pan.
- 28. Shape elongated köfte from the meat mixture, about as thick as a thumb.
- 29. Heat 2 tablespoons of oil in the same pan over high heat.
- 30. Fry the köfte for about 2 minutes on all sides.
- 31. Cook the köfte covered over low heat for about 3 to 4 minutes until done.
- 32. Wash the tomatoes and remove the stem.
- 33. Cut the tomatoes into about half-centimeter cubes.
- 34. Wash the cucumber and cut off the ends.
- 35. Peel the cucumber and halve it.
- 36. Scoop out the seeds from the cucumber halves with a spoon.
- 37. Cut the cucumber into about half-centimeter pieces.
- 38. Place the tomatoes and cucumber in a bowl.
- 39. Add the remaining herbs.
- 40. Add 1 tablespoon of lemon juice.
- 41. Add olive oil.
- 42. Mix the salad.
- 43. Season the salad with salt, pepper, and sugar.
- 44. Fluff the rice with a fork.
- 45. Season the rice with salt and pepper.
- 46. Plate the köfte, hummus, salad, and rice.
- 47. Serve the dish.
