🍽️ Pesto Turkey Roll-Ups as Involtini with Cabbage Vegetables and Mashed Potatoes

Ingredients
- potatoes, starchy 1 kg
- salt pinch
- turkey breast cutlets 600 g
- pepper, black ground pinch
- pesto alla Genovese 6 tsp
- Gouda, grated 100 g
- white cabbage 1 pc.
- onions, yellow 1 pc.
- oil 4 tbsp
- white wine, dry 100 ml
- vegetable broth 200 ml
- milk 150 ml
- butter 3 tbsp
- nutmeg, ground pinch
Instructions
- 1. Wash the potatoes thoroughly.
- 2. Peel the potatoes.
- 3. Cut the potatoes into large cubes.
- 4. Place the potato cubes in a pot.
- 5. Fill the pot with salted water.
- 6. Bring the water to a boil.
- 7. Reduce the heat to medium.
- 8. Cover the pot.
- 9. Cook the potatoes for about 12 minutes.
- 10. Wash the turkey breast.
- 11. Dry the turkey breast with kitchen towels.
- 12. Place the turkey breast between cling film.
- 13. Pound the turkey breast flat with a meat mallet.
- 14. Season the turkey breast on both sides with salt.
- 15. Season the turkey breast on both sides with pepper.
- 16. Spread one side of the turkey breast thinly with 1 tsp of pesto.
- 17. Sprinkle cheese over the pesto.
- 18. Roll up the turkey breast tightly.
- 19. Secure the ends of the roll with toothpicks.
- 20. Wash the white cabbage.
- 21. Quarter the white cabbage.
- 22. Cut out the core from the white cabbage.
- 23. Cut the white cabbage into wide strips.
- 24. Halve the onion.
- 25. Peel the onion.
- 26. Dice the onion finely.
- 27. Heat oil in a pan over medium heat.
- 28. Place the turkey rolls seam-side down in the pan.
- 29. Fry the rolls for about 5 minutes until golden brown on all sides.
- 30. Transfer the rolls to a plate.
- 31. Leave the pan unwashed.
- 32. Reheat the pan over medium heat.
- 33. Add the white cabbage and onions to the pan.
- 34. Sauté the vegetables in the pan juices for about 3 minutes.
- 35. Deglaze the vegetables with wine.
- 36. Let the liquid reduce for about 1 minute.
- 37. Prepare broth if necessary.
- 38. Add the broth.
- 39. Season the white cabbage with salt.
- 40. Season the white cabbage with pepper.
- 41. Place the turkey rolls on top of the cabbage.
- 42. Reduce the heat to low.
- 43. Cover the pan.
- 44. Simmer the dish for about 12 minutes.
- 45. Drain the potatoes.
- 46. Add milk and butter to the pot with the potatoes.
- 47. Mash the potatoes into puree using a potato masher.
- 48. Season the puree with salt.
- 49. Season the puree with pepper.
- 50. Season the puree with nutmeg.
- 51. Plate the mashed potatoes.
- 52. Place the turkey rolls on the plates.
- 53. Add the white cabbage vegetables to the plates.
