🍳 Pesto eggs on toasted bread

Ingredients
- Pesto alla Genovese 2 tbsp
- Eggs 1 pcs
- Crusty bread 50 g
- Serrano ham 2 slices
- Olive oil 1 tsp
- Cherry tomatoes 75 g
Instructions
- 1. Heat a non-stick frying pan over medium heat.
- 2. Add the pesto to the hot pan and spread it out evenly.
- 3. Crack an egg and place it directly into the pesto.
- 4. Fry the egg in the pesto until it is cooked.
- 5. Toast a slice of bread in the meantime.
- 6. Place the Serrano ham on the toasted bread slice.
- 7. Carefully remove the pesto egg from the pan.
- 8. Place the egg on top of the bread with the ham.
- 9. Add a little olive oil to the still warm pan.
- 10. Wash the tomatoes thoroughly.
- 11. Roast the tomatoes in the olive oil for about 2 minutes.
- 12. Remove the tomatoes from the heat when they are soft.
- 13. Place the roasted tomatoes on the finished dish.
- 14. Serve the dish immediately and enjoy!
