  1. 1. Heat a non-stick frying pan over medium heat.
  2. 2. Add the pesto to the hot pan and spread it out evenly.
  3. 3. Crack an egg and place it directly into the pesto.
  4. 4. Fry the egg in the pesto until it is cooked.
  5. 5. Toast a slice of bread in the meantime.
  6. 6. Place the Serrano ham on the toasted bread slice.
  7. 7. Carefully remove the pesto egg from the pan.
  8. 8. Place the egg on top of the bread with the ham.
  9. 9. Add a little olive oil to the still warm pan.
  10. 10. Wash the tomatoes thoroughly.
  11. 11. Roast the tomatoes in the olive oil for about 2 minutes.
  12. 12. Remove the tomatoes from the heat when they are soft.
  13. 13. Place the roasted tomatoes on the finished dish.
  14. 14. Serve the dish immediately and enjoy!
