🍽️ Persian dish with turkey and cold cucumber cream

Ingredients
- carrots 8 pcs.
- oil 5 tbsp
- salt pinch
- pepper, black ground pinch
- soft dates, dried and pitted 50 g
- dill, fresh 10 g
- salad cucumbers 2 pcs.
- yogurt, plain 300 g
- turkey breast fillet 600 g
- organic limes 1 pcs.
- onions, red 2 pcs.
- olive oil 1 tbsp
- pumpkin seeds 50 g
- sugar pinch
Instructions
- 1. Preheat the oven to 220 degrees top and bottom heat.
- 2. Wash the carrots thoroughly and peel them.
- 3. Cut the carrots into lengthwise quarters.
- 4. Line a baking sheet with baking paper and distribute the carrots on it.
- 5. Add 3 tablespoons of oil over the carrots.
- 6. Season the carrots with salt and pepper.
- 7. Cook the carrots in the oven for about 26 to 28 minutes.
- 8. Chop the dates roughly and set them aside.
- 9. Rinse the dill and pluck the leaves from the stems.
- 10. Wash the cucumber and cut it into rough pieces of about 1 cm.
- 11. Put the cucumber, dill and yogurt in a tall container.
- 12. Puree the mixture with a hand blender.
- 13. Season the cucumber cream with salt and pepper.
- 14. Set the cucumber cream aside.
- 15. Rinse the turkey meat and pat it dry.
- 16. Season the turkey meat.
- 17. Heat 2 tablespoons of oil in a pan strongly.
- 18. Fry the turkey meat for approx. 2 minutes on both sides.
- 19. Halve the lime.
- 20. Squeeze the juice of the lime.
- 21. Add half of the lime juice to the meat.
- 22. Season the meat with salt and pepper.
- 23. Put the turkey meat together with the carrots in the oven.
- 24. Halve the onion and peel it.
- 25. Cut the onion into thin half-moons of approx. 0.5 cm thick.
- 26. Heat olive oil in the same pan.
- 27. Roast the onions, dates and pumpkin seeds with a little sugar over medium heat for about 3 minutes.
- 28. Deglaze the pan with the remaining lime juice.
- 29. Season the mixture with salt and pepper.
- 30. Take the carrots and the turkey meat out of the oven.
- 31. Arrange the meat and carrots on plates.
- 32. Distribute the onions, pumpkin seeds and dates on top.
- 33. Serve the cucumber cream in bowls.
