🥗 Penne Salad with Marinated Turkey

Ingredients
- Pork loin fillet 600 g
- Lemons 1 pc.
- Garlic cloves 2 pc.
- Parsley, fresh 1 bunch
- Salt pinch
- Pepper, black ground pinch
- Ciabatta bread 1 pc.
- Cherry tomatoes 400 g
- Penne Rigate 500 g
- Olive oil 1 tbsp
Instructions
- 1. Rinse the turkey breast fillets under running water and pat them dry with a kitchen towel.
- 2. Cut the turkey meat into small cubes.
- 3. Wash the lemon thoroughly under hot water.
- 4. Grate about one teaspoon of lemon zest.
- 5. Halve the lemon and squeeze out the juice.
- 6. Peel the garlic and chop it finely.
- 7. Rinse the parsley and dry it.
- 8. Remove the parsley leaves from the stems.
- 9. Cut the parsley leaves into small pieces.
- 10. Put the parsley, garlic, lemon zest, and two tablespoons of lemon juice into a bowl.
- 11. Season the mixture with salt and pepper.
- 12. Mix the ingredients in the bowl well.
- 13. Put the turkey cubes into a separate bowl.
- 14. Coat the turkey pieces with half of the marinade.
- 15. Bring about five liters of salted water to a boil in a pot.
- 16. Cover the pot with a lid.
- 17. Grate the bread roughly or cut it into small cubes.
- 18. Put the bread into a bowl.
- 19. Mix the bread with the remaining marinade.
- 20. Season the bread with salt and pepper.
- 21. Rinse the tomatoes.
- 22. Cook the pasta in the boiling salted water for about ten minutes.
- 23. Cook the pasta al dente (firm to the bite).
- 24. Heat the oil in a pan over medium heat.
- 25. Fry the turkey cubes all around for about five to six minutes.
- 26. Add the tomatoes to the turkey in the pan.
- 27. Cover the pan.
- 28. Cook the tomatoes for another six to seven minutes.
- 29. Season the tomatoes with salt and pepper.
- 30. Drain the pasta in a colander.
- 31. Return the pasta to the pot.
- 32. Fold in the bread with the pasta.
- 33. Fold in the sautéed turkey with the pasta.
- 34. Mix everything well together.
- 35. Plate the salad.
- 36. Serve the dish.
