  1. 1. Let the salmon thaw overnight in the refrigerator.
  2. 2. Bring about 5 liters of salted water to a boil in a large pot.
  3. 3. Peel the garlic and dice it finely.
  4. 4. Wash the lemon thoroughly, halve it, and squeeze out the juice.
  5. 5. Rinse the salmon and pat it dry.
  6. 6. Cut the salmon into cubes.
  7. 7. Season the salmon cubes with 1 tsp of lemon juice, the garlic, salt, and pepper.
  8. 8. Cook the penne in the boiling salted water for about 10 minutes until al dente (firm to the bite).
  9. 9. Halve the avocado and remove the pit.
  10. 10. Scoop the avocado flesh out of the skin with a spoon.
  11. 11. Cut the avocado flesh into cubes.
  12. 12. Drain the capers.
  13. 13. Heat the oil in a pan over medium heat.
  14. 14. Fry the salmon in the pan for about 3 minutes.
  15. 15. Add the capers and the avocado to the pan.
  16. 16. Remove the pan from the heat.
  17. 17. Drain the penne in a colander.
  18. 18. Save about one cup of the cooking water.
  19. 19. Mix the penne in the pan with the salmon and avocado.
  20. 20. Add some of the saved cooking water.
  21. 21. Season the dish with salt and pepper to taste.
  22. 22. Finish it to taste with a little lemon juice.
  23. 23. Plate the dish.
