🍽️ Penne with Salmon and Avocado

Ingredients
- salmon fillet, frozen 500 g
- salt pinch
- garlic cloves 1 pc.
- lemons 1 pc.
- pepper, black ground pinch
- penne rigate 500 g
- avocado 2 pc.
- capers 2 tsp
- olive oil 3 tbsp
Instructions
- 1. Let the salmon thaw overnight in the refrigerator.
- 2. Bring about 5 liters of salted water to a boil in a large pot.
- 3. Peel the garlic and dice it finely.
- 4. Wash the lemon thoroughly, halve it, and squeeze out the juice.
- 5. Rinse the salmon and pat it dry.
- 6. Cut the salmon into cubes.
- 7. Season the salmon cubes with 1 tsp of lemon juice, the garlic, salt, and pepper.
- 8. Cook the penne in the boiling salted water for about 10 minutes until al dente (firm to the bite).
- 9. Halve the avocado and remove the pit.
- 10. Scoop the avocado flesh out of the skin with a spoon.
- 11. Cut the avocado flesh into cubes.
- 12. Drain the capers.
- 13. Heat the oil in a pan over medium heat.
- 14. Fry the salmon in the pan for about 3 minutes.
- 15. Add the capers and the avocado to the pan.
- 16. Remove the pan from the heat.
- 17. Drain the penne in a colander.
- 18. Save about one cup of the cooking water.
- 19. Mix the penne in the pan with the salmon and avocado.
- 20. Add some of the saved cooking water.
- 21. Season the dish with salt and pepper to taste.
- 22. Finish it to taste with a little lemon juice.
- 23. Plate the dish.
