  3. 3. Wash the fresh basil.
  4. 4. Pluck the basil leaves from the stems.
  5. 5. Heat 3 tablespoons of olive oil in a pot over high heat.
  6. 6. Sauté the chopped garlic and onion for about 2 minutes.
  7. 7. Add the tomato paste to the pot.
  8. 8. Roast the tomato paste for another 2 minutes.
  9. 9. Season the mixture with salt, pepper, sugar, chili, and the basil stems.
  10. 10. Deglaze the pan with vodka.
  11. 11. Add the chopped tomatoes and the cream.
  12. 12. Let the sauce simmer on low heat for about 10 minutes.
  13. 13. Bring 5 liters of salted water to a boil in a large pot.
  14. 14. Cook the penne in the boiling salted water for about 9 minutes until al dente.
  15. 15. Drain the pasta in a colander.
  16. 16. Finally, adjust the seasoning of the vodka tomato sauce.
  17. 17. Remove the basil stems from the sauce.
  18. 18. Distribute the sauce and the penne onto plates.
  19. 19. Garnish the dish with fresh basil and grated Parmesan.
  20. 20. Serve the penne alla vodka hot.
