🍰 Penjurlije – sweet yeast dough cheese pastries

Ingredients
- milk 100 ml
- yeast, fresh 0.5 pc.
- sugar 60 g
- wheat flour, type 405 600 g
- salt pinch
- butter 250 g
- yogurt, plain 100 g
- eggs 4 pc.
- feta 200 g
Instructions
- 1. Warm the milk in a pot for about 1 minute until it is lukewarm.
- 2. Crumble the yeast into a bowl.
- 3. Dissolve the yeast together with 1 tbsp of sugar in the lukewarm milk.
- 4. Cover the bowl and let the mixture rest for approx. 15 minutes.
- 5. Mix the remaining sugar, flour, salt, and 125 g of cubed butter in a separate bowl.
- 6. Add the yeast milk, the yogurt, and 1 egg.
- 7. Knead everything into a homogeneous dough.
- 8. Cover the bowl with a clean kitchen towel.
- 9. Let the dough rise in a warm place for about 1 hour until it has approximately doubled in size.
- 10. Preheat the oven to 190 °C (top/bottom heat).
- 11. Melt the remaining butter in the pot.
- 12. Knead the dough briefly.
- 13. Divide the dough into 12 equal portions.
- 14. Roll out the portions.
- 15. Brush the dough pieces with the melted butter.
- 16. Roll up the dough pieces.
- 17. Place the dough rolls side by side in a greased baking dish.
- 18. Puree the feta cheese, the remaining eggs, and 50 g of sugar in a tall container.
- 19. Pour the cheese-egg mixture over the dough rolls.
- 20. Bake the pastries in the oven for approx. 30 minutes until golden brown.
- 21. Carefully remove the pastries from the oven.
- 22. Serve them warm or after cooling down.
