  2. 2. Separate the eggs and use the yolks for another purpose.
  3. 3. Whisk the egg whites in a bowl with a hand mixer and whisk attachment for about 3 to 4 minutes.
  4. 4. Gradually add 330 grams of sugar.
  5. 5. Continue whisking until the sugar has completely dissolved.
  6. 6. Whisk the mixture for another 8 to 10 minutes until it is thick and glossy.
  7. 7. Mix 1 teaspoon of cornstarch, 2 teaspoons of vinegar, and 1 teaspoon of red food coloring in a small bowl.
  8. 8. Gently fold the mixture into the egg whites for about 1 minute.
  9. 9. Shape the mixture on a baking sheet lined with parchment paper into a half-sphere shape about 20 centimeters in diameter.
  10. 10. Place the tray in the oven and reduce the temperature to 120 degrees Celsius.
  11. 11. Bake the Pavlova for about 60 minutes.
  12. 12. Turn off the oven and let the Pavlova cool down inside.
  13. 13. Heat 350 grams of berries with 1 tablespoon of sugar in a pot over medium heat.
  14. 14. Let the berries simmer gently for about 3 minutes until they soften.
  15. 15. Let the cooked berries cool down.
  16. 16. Puree the remaining berries with 1 tablespoon of sugar in a tall container.
  17. 17. Whip the cream stiffly using a hand mixer and whisk attachment.
  18. 18. Gently fold the berry puree into the whipped cream.
  19. 19. Spread the cream over the cooled Pavlova.
  20. 20. Decorate with the cooked berries and serve the dessert immediately.
