🍰 Crunchy Pavlova with Fresh Berries

Ingredients
- eggs 8 pcs
- sugar 350 g
- cornstarch 1 tsp
- vinegar 2 tsp
- red food coloring 1 tsp
- frozen berry mix 400 g
- whipping cream 400 g
Instructions
- 1. Preheat the oven to 150 degrees Celsius with fan.
- 2. Separate the eggs and use the yolks for another purpose.
- 3. Whisk the egg whites in a bowl with a hand mixer and whisk attachment for about 3 to 4 minutes.
- 4. Gradually add 330 grams of sugar.
- 5. Continue whisking until the sugar has completely dissolved.
- 6. Whisk the mixture for another 8 to 10 minutes until it is thick and glossy.
- 7. Mix 1 teaspoon of cornstarch, 2 teaspoons of vinegar, and 1 teaspoon of red food coloring in a small bowl.
- 8. Gently fold the mixture into the egg whites for about 1 minute.
- 9. Shape the mixture on a baking sheet lined with parchment paper into a half-sphere shape about 20 centimeters in diameter.
- 10. Place the tray in the oven and reduce the temperature to 120 degrees Celsius.
- 11. Bake the Pavlova for about 60 minutes.
- 12. Turn off the oven and let the Pavlova cool down inside.
- 13. Heat 350 grams of berries with 1 tablespoon of sugar in a pot over medium heat.
- 14. Let the berries simmer gently for about 3 minutes until they soften.
- 15. Let the cooked berries cool down.
- 16. Puree the remaining berries with 1 tablespoon of sugar in a tall container.
- 17. Whip the cream stiffly using a hand mixer and whisk attachment.
- 18. Gently fold the berry puree into the whipped cream.
- 19. Spread the cream over the cooled Pavlova.
- 20. Decorate with the cooked berries and serve the dessert immediately.
