  1. 1. Wash, peel, and cut the parsnips and potatoes into coarse cubes. Bring to a boil in a pot of salted water and cook over medium heat for about 15 minutes until tender.
  2. 2. Cut the shallots in half, peel, and dice finely. Wash the pears, quarter them, remove the core, and cut into small pieces. Wash the parsley, pat dry, pluck the leaves from the stems, and cut into fine strips.
  3. 3. Heat a pot over medium heat. Add the red cabbage along with the shallot and about 150 ml of water, cover, and simmer for about 10 minutes, stirring occasionally.
  4. 4. Heat the oil in a pan over high heat. Sear the pear pieces in it for about 3 minutes. Add the sugar beet syrup, mix well, and simmer over medium heat for about 3 minutes.
  5. 5. Drain the parsnips and potatoes using a lid. Add the milk to the pot and puree the vegetables with a hand mixer. Season the parsnip puree with nutmeg, salt, and pepper.
  6. 6. Taste the red cabbage and serve it on plates together with the parsnip puree and sweet pears. Garnish with parsley and serve. Enjoy your meal!
