🍰 Crispy Pastel de Nata

Ingredients
- Lemon 1 pc
- Milk 250 ml
- Sugar 5 tbsp
- Vanilla Sugar 1 tsp
- Cinnamon pinch
- Cornstarch 2 tbsp
- Eggs 2 pc
- Puff Pastry 1 pc
- Powdered Sugar 1 tbsp
Instructions
- 1. Wash the lemon thoroughly.
- 2. Grate about one teaspoon of the zest.
- 3. Put milk, sugar, vanilla sugar, cinnamon, and the lemon zest into a pot.
- 4. Heat the mixture over medium heat until it boils.
- 5. Mix the starch in a small bowl with two tablespoons of water.
- 6. Stir the starch solution into the boiling milk while stirring constantly.
- 7. Remove the pot from the heat.
- 8. Separate the eggs and use the egg whites for something else.
- 9. Whisk the egg yolks in a bowl with a little of the lukewarm milk mixture until smooth.
- 10. Add the remaining milk and mix everything well.
- 11. Cover the cream with plastic wrap.
- 12. Place the cream in the refrigerator.
- 13. Preheat the oven to 250 degrees Celsius with top and bottom heat.
- 14. Roll out the puff pastry.
- 15. Cut the pastry into twelve equal squares.
- 16. Grease a muffin tin.
- 17. Place the puff pastry pieces into the cups.
- 18. Press a rim into the pastry pieces with your fingers.
- 19. Fill the cream evenly into the cups.
- 20. Place the tray in the oven.
- 21. Bake the Pastel de Nata for about 15 minutes.
- 22. Carefully remove the Pastel de Nata from the oven.
- 23. Let them cool down for a short while.
- 24. Dust them with powdered sugar.
- 25. Enjoy them warm or chilled.
