🍝 Pasta with Ham in Creamy Mushroom-Spinach Sauce

Ingredients
- Organic lemons 1 pc.
- Mushrooms, white 400 g
- Spring onions 1 bunch
- Salt 1 tbsp
- Leaf spinach 350 g
- Black Forest ham 125 g
- Oil 2 tbsp
- Pepper, black ground pinch
- Pappardelle, fresh 800 g
- Cream cheese, plain 200 g
- Sugar pinch
Instructions
- 1. Rinse the lemon under hot water.
- 2. Grate about one teaspoon of the zest.
- 3. Cut the lemon in half and squeeze out the juice.
- 4. Clean the mushrooms with kitchen paper if necessary.
- 5. Cut the mushrooms into quarters.
- 6. Wash the spring onions.
- 7. Remove the roots from the spring onions.
- 8. Slice the spring onions into thin rings.
- 9. Set aside the green rings of the spring onions.
- 10. Bring five liters of salted water to a boil in a large pot.
- 11. Wash the spinach.
- 12. Drain the spinach.
- 13. Chop the spinach finely.
- 14. Remove the fatty edge from the ham.
- 15. Tear the ham into small pieces.
- 16. Heat the oil in a pan over high heat.
- 17. Sauté the mushrooms with a pinch of salt for about three minutes.
- 18. Add one teaspoon of lemon zest.
- 19. Add one teaspoon of lemon juice.
- 20. Add the white rings of the spring onions.
- 21. Season the mixture with pepper.
- 22. Cook everything over medium heat for about two minutes.
- 23. Cook the pasta in boiling salted water for about four minutes.
- 24. Cook the pasta al dente (firm to the bite).
- 25. Add the spinach to the pan.
- 26. Add the green spring onion rings to the pan.
- 27. Add one to two ladles of the cooking water to the pan.
- 28. Let the sauce simmer for about three to four minutes.
- 29. Drain the pasta.
- 30. Remove the pan from the heat.
- 31. Add the cream cheese to the sauce.
- 32. Season the sauce with a little salt.
- 33. Season the sauce with a little pepper.
- 34. Add a pinch of sugar.
- 35. Taste the sauce and adjust seasoning.
- 36. Place the pasta on the plates.
- 37. Pour the sauce over the pasta.
- 38. Place the ham on top of the pasta.
- 39. Serve the dish.
