🍝 Mixed Pasta with Maultaschen and Schupfnudeln

Ingredients
- onions, red 2 pcs.
- peppers, red 2 pcs.
- cherry tomatoes mix 500 g
- vegan maultaschen 300 g
- oil 2 tbsp
- Vemondo vegan schupfnudeln 500 g
- oat drink 200 ml
- organic limes 2 pcs.
- salt pinch
- pepper, black ground pinch
- basil, fresh 15 g
Instructions
- 1. Peel the onions and chop them into coarse cubes.
- 2. Wash the bell peppers.
- 3. Halve the bell peppers.
- 4. Remove the stem and the core.
- 5. Cut the peppers into pieces.
- 6. Wash the cherry tomatoes.
- 7. Halve the cherry tomatoes.
- 8. Cut the Maultaschen into wide strips.
- 9. Heat 2 tablespoons of oil in a pan over medium heat.
- 10. Fry the Maultaschen and Schupfnudeln for approx. 3-4 minutes until golden brown.
- 11. Add the onions and the peppers.
- 12. Continue frying everything for approx. 3 minutes, stirring occasionally.
- 13. Add the cherry tomatoes.
- 14. Add the oat drink.
- 15. Cook the mixture for approx. 2 minutes over low heat.
- 16. Wash the lime with hot water.
- 17. Grate approx. 1 teaspoon of zest finely.
- 18. Halve the lime.
- 19. Squeeze out the juice.
- 20. Season the pasta with salt.
- 21. Season the pasta with pepper.
- 22. Add the lime juice.
- 23. Add the lime zest.
- 24. Wash the basil.
- 25. Shake the basil dry.
- 26. Pluck the leaves from the stems.
- 27. Serve the Pasta Mista in a deep plate.
- 28. Garnish the pasta with basil.
