🍝 Spicy Penne with Crispy Ham

Ingredients
- Garlic cloves 1 pc.
- Onions, yellow 1 pc.
- chili pepper Mix 0.5 pc.
- Olive oil 5 tbsp
- Brown sugar 1 tsp
- Balsamic vinegar, light 2 tbsp
- Tomatoes, chopped 800 g
- Salt pinch
- Black Forest ham 200 g
- penne rigate 500 g
- Parsley, fresh 20 g
- crème fraîche 200 g
- parmesan 20 g
- Pepper, black ground pinch
- Sugar pinch
Instructions
- 1. Finely dice the onions and garlic.
- 2. Wash the chili peppers, remove the seeds, and slice them into thin strips.
- 3. Heat two tablespoons of olive oil in a pot over medium heat.
- 4. Sauté the onions, garlic, and chili strips for about two minutes.
- 5. Add the sugar and let it melt for one minute.
- 6. Deglaze the mixture with balsamic vinegar.
- 7. Stir in the chopped tomatoes and simmer the sauce uncovered for 15 minutes.
- 8. Tear the ham into rough chunks.
- 9. Heat a frying pan over medium heat.
- 10. Fry the ham pieces for two minutes without adding extra fat.
- 11. Place the ham on kitchen paper to drain excess fat.
- 12. Bring about five liters of salted water to a boil in a large pot.
- 13. Cook the penne for nine minutes until al dente (firm to the bite).
- 14. Drain the pasta in a colander.
- 15. Wash the parsley and shake off the water.
- 16. Finely chop the parsley leaves.
- 17. Mix the parsley with three tablespoons of olive oil, salt, and pepper in a bowl.
- 18. Stir the crème fraîche into the tomato sauce.
- 19. Combine the sauce, penne, and parsley mixture in a large pot.
- 20. Season the dish with salt, pepper, and a little sugar to taste.
- 21. Serve the pasta on deep plates.
- 22. Top the pasta with the parsley oil and the crispy ham.
- 23. Grate fresh Parmesan finely over the top and serve.
- 24. Tip: Alternatively, you can bake the ham on a baking sheet lined with parchment paper at 190 degrees Celsius (convection) for five to eight minutes until crispy.
- 25. Ensure the ham turns golden brown but does not burn.
- 26. Let the oven-baked ham drain on kitchen paper as well.
