  3. 3. Heat two tablespoons of olive oil in a pot over medium heat.
  4. 4. Sauté the onions, garlic, and chili strips for about two minutes.
  5. 5. Add the sugar and let it melt for one minute.
  6. 6. Deglaze the mixture with balsamic vinegar.
  7. 7. Stir in the chopped tomatoes and simmer the sauce uncovered for 15 minutes.
  8. 8. Tear the ham into rough chunks.
  9. 9. Heat a frying pan over medium heat.
  10. 10. Fry the ham pieces for two minutes without adding extra fat.
  11. 11. Place the ham on kitchen paper to drain excess fat.
  12. 12. Bring about five liters of salted water to a boil in a large pot.
  13. 13. Cook the penne for nine minutes until al dente (firm to the bite).
  14. 14. Drain the pasta in a colander.
  15. 15. Wash the parsley and shake off the water.
  16. 16. Finely chop the parsley leaves.
  17. 17. Mix the parsley with three tablespoons of olive oil, salt, and pepper in a bowl.
  18. 18. Stir the crème fraîche into the tomato sauce.
  19. 19. Combine the sauce, penne, and parsley mixture in a large pot.
  20. 20. Season the dish with salt, pepper, and a little sugar to taste.
  21. 21. Serve the pasta on deep plates.
  22. 22. Top the pasta with the parsley oil and the crispy ham.
  23. 23. Grate fresh Parmesan finely over the top and serve.
  24. 24. Tip: Alternatively, you can bake the ham on a baking sheet lined with parchment paper at 190 degrees Celsius (convection) for five to eight minutes until crispy.
