  1. 1. Put sugar and water into a small saucepan.
  2. 2. Heat the mixture on medium heat.
  3. 3. Let the syrup simmer gently for about 2 minutes.
  4. 4. Pour the finished sugar syrup into a bottle.
  5. 5. Cut a passion fruit in half.
  6. 6. Scoop out the pulp from one of the halves.
  7. 7. Cut a lime in half.
  8. 8. Squeeze the juice out of the lime.
  9. 9. Wash a few mint leaves.
  10. 10. Shake the mint dry.
  11. 11. Fill a shaker with ice cubes.
  12. 12. Pour 5 cl of gin into the shaker.
  13. 13. Add a shot (2 cl) of lime juice.
  14. 14. Add half a shot (1 cl) of the sugar syrup.
  15. 15. Add the passion fruit pulp to the shaker.
  16. 16. Shake the mixture vigorously.
  17. 17. Fill a drinking glass with fresh ice cubes.
  18. 18. Strain the contents of the shaker into the glass.
  19. 19. Top up the drink with Tonic Gingerbeer.
  20. 20. Garnish the cocktail with mint and the remaining passion fruit.
  21. 21. Serve the drink immediately.
