  1. 1. Preheat the oven to 200 °C (convection). Remove the rind from the Parmesan and grate it finely. In a bowl, mix the cheese with flour, honey, salt, chili, and oil. Add water until a homogeneous dough forms.
  2. 2. Roll out the dough on a lightly floured surface to about 3 mm thickness and cut it into rectangles using a fluted pastry wheel. Place the pieces on two baking sheets lined with parchment paper, leaving some space between them. Prick them several times with a fork and sprinkle them lightly with salt.
  3. 3. Bake the sheets one after the other in the oven for approx. 12–15 minutes, until the crackers take on a light browning. Let them cool on a wire rack and store them in an airtight container until serving. Enjoy your meal!
