🍽️ Paprika Schnitzel with Fries

Ingredients
- potatoes, mainly waxy 1 kg
- oil 5 tbsp
- salt pinch
- pepper, black ground pinch
- pepper, red 3 pcs
- onions, yellow 2 pcs
- champignons in jar, sliced 200 g
- tomato paste 2 tbsp
- pepper, sweet spice pinch
- red wine, dry 100 ml
- vegetable broth 300 ml
- ham schnitzel from the top round of pork 600 g
- wheat flour, Type 405 2 tbsp
- parsley, fresh 20 g
Instructions
- 1. Preheat the oven to 200 degrees Celsius fan-forced.
- 2. Wash the potatoes thoroughly.
- 3. Cut the unpeeled potatoes into fry shapes.
- 4. Place the fries on a baking sheet lined with baking paper.
- 5. Add 2 tablespoons of oil, salt, and pepper.
- 6. Mix everything well and distribute the fries evenly.
- 7. Bake the fries for about 20 minutes.
- 8. Rinse the peppers thoroughly.
- 9. Halve the peppers and remove the core and seeds.
- 10. Cut the peppers into strips.
- 11. Halve the onions and peel them.
- 12. Cut the onions into strips as well.
- 13. Drain the mushrooms in a sieve.
- 14. Heat 1 tablespoon of oil in a pot over high heat.
- 15. Fry the onions for about 2 minutes.
- 16. Add the pepper strips.
- 17. Fry the peppers for another 2 minutes.
- 18. Add the mushrooms and tomato paste.
- 19. Season with salt, pepper, and paprika powder.
- 20. Deglaze the mixture with red wine.
- 21. Let the sauce boil for about 3 minutes.
- 22. Top up the sauce with vegetable broth.
- 23. Simmer the sauce for approx. 10 minutes over medium heat.
- 24. Rinse the schnitzels.
- 25. Pat the schnitzels dry with a kitchen towel.
- 26. Press the schnitzels slightly flat.
- 27. Spread some flour on a plate.
- 28. Season the schnitzels with salt and pepper.
- 29. Coat the schnitzels in the flour.
- 30. Heat 2 tablespoons of oil in a pan over high heat.
- 31. Fry the schnitzels on both sides for about 4 minutes until golden brown.
- 32. Remove the pan from the stove.
- 33. Let the schnitzels rest for approx. 4 minutes.
- 34. Rinse the parsley.
- 35. Shake the parsley dry.
- 36. Pluck the leaves from the stems.
- 37. Chop the parsley leaves roughly.
- 38. Take the fries out of the oven.
- 39. Plate the schnitzels.
- 40. Pour the paprika sauce over the schnitzels.
- 41. Garnish the dishes with the chopped parsley.
- 42. Serve the paprika schnitzels together with the fries.
