  1. 1. Ideally, thaw the salmon overnight in the refrigerator.
  2. 2. Rinse the fish, pat it dry, and cut it into small cubes.
  3. 3. Wash the lemon thoroughly, halve it, and squeeze out the juice.
  4. 4. Season the salmon cubes with salt and the lemon juice.
  5. 5. Set the marinated cubes aside.
  6. 6. Bring about 5 liters of water with salt to a boil in a pot.
  7. 7. Halve the avocado and remove the pit.
  8. 8. Scoop the flesh out of the skin with a spoon.
  9. 9. Cut the avocado flesh into cubes.
  10. 10. Wash the basil and dry the leaves thoroughly.
  11. 11. Pluck the leaves off the stems.
  12. 12. Finely chop the basil leaves.
  13. 13. Cook the pappardelle in the boiling salted water for about 3 minutes.
  14. 14. The pasta should be al dente (firm to the bite) while cooking.
  15. 15. Drain the noodles into a colander.
  16. 16. Catch a cup of the pasta cooking water while draining.
  17. 17. Heat the oil in a pan over high heat.
  18. 18. Fry the salmon for about 4 minutes until golden brown.
  19. 19. Add the avocado cubes to the pan.
  20. 20. Deglaze the pan with the saved pasta cooking water.
  21. 21. Mix the sauce with the pappardelle noodles.
  22. 22. Taste the dish and adjust the seasoning if needed.
  23. 23. Plate the pasta on dishes.
  24. 24. Garnish the dish with the chopped basil.
