🍽️ Salmon Pappardelle with Fresh Avocado

Ingredients
- salmon fillet, frozen 600 g
- lemons 1 pc.
- salt pinch
- avocado 1 pc.
- basil, fresh 20 g
- pappardelle, fresh 500 g
- olive oil 2 tbsp
Instructions
- 1. Ideally, thaw the salmon overnight in the refrigerator.
- 2. Rinse the fish, pat it dry, and cut it into small cubes.
- 3. Wash the lemon thoroughly, halve it, and squeeze out the juice.
- 4. Season the salmon cubes with salt and the lemon juice.
- 5. Set the marinated cubes aside.
- 6. Bring about 5 liters of water with salt to a boil in a pot.
- 7. Halve the avocado and remove the pit.
- 8. Scoop the flesh out of the skin with a spoon.
- 9. Cut the avocado flesh into cubes.
- 10. Wash the basil and dry the leaves thoroughly.
- 11. Pluck the leaves off the stems.
- 12. Finely chop the basil leaves.
- 13. Cook the pappardelle in the boiling salted water for about 3 minutes.
- 14. The pasta should be al dente (firm to the bite) while cooking.
- 15. Drain the noodles into a colander.
- 16. Catch a cup of the pasta cooking water while draining.
- 17. Heat the oil in a pan over high heat.
- 18. Fry the salmon for about 4 minutes until golden brown.
- 19. Add the avocado cubes to the pan.
- 20. Deglaze the pan with the saved pasta cooking water.
- 21. Mix the sauce with the pappardelle noodles.
- 22. Taste the dish and adjust the seasoning if needed.
- 23. Plate the pasta on dishes.
- 24. Garnish the dish with the chopped basil.
