  1. 1. Rinse the lemon and orange under running water.
  2. 2. Grate about one teaspoon of fine zest from both fruits.
  3. 3. Slice the vanilla pod lengthwise.
  4. 4. Scrape out the pulp (seeds) from the pod with a knife.
  5. 5. Place the cream, 150 grams of sugar, the vanilla pod, the pulp, and the citrus zest into a pot.
  6. 6. Heat the mixture and let it steep for about 10 to 15 minutes.
  7. 7. Soak the gelatin in cold water.
  8. 8. Squeeze the soaked gelatin well.
  9. 9. Dissolve the gelatin in the warm cream.
  10. 10. Pour the cream through a fine sieve to remove solid ingredients.
  11. 11. Pour the liquid into bowls.
  12. 12. Place the bowls in the refrigerator for about 3 hours.
  13. 13. Peel the pineapple and the mango.
  14. 14. Cut the fruit into small cubes.
  15. 15. Add 50 grams of sugar to a pot.
  16. 16. Caramelize the sugar over low heat.
  17. 17. Add the pineapple and white wine as soon as the sugar starts to melt.
  18. 18. Let the mixture simmer for about 3 minutes.
  19. 19. Add the mango and the butter.
  20. 20. Continue cooking the mixture for approx. 2 minutes.
  21. 21. Let the fruit mixture cool down.
  22. 22. Serve the panna cotta with the exotic fruits in a glass.
