🍰 Panna Cotta with Exotic Fruits

Ingredients
- lemons 2 pcs.
- oranges 1 pcs.
- vanilla pod 1 pcs.
- whipping cream 500 ml
- sugar 200 g
- leaf gelatin 4 pcs.
- pineapple 0.25 pcs.
- mango 1 pcs.
- dry white wine 20 ml
- butter 3 tsp
Instructions
- 1. Rinse the lemon and orange under running water.
- 2. Grate about one teaspoon of fine zest from both fruits.
- 3. Slice the vanilla pod lengthwise.
- 4. Scrape out the pulp (seeds) from the pod with a knife.
- 5. Place the cream, 150 grams of sugar, the vanilla pod, the pulp, and the citrus zest into a pot.
- 6. Heat the mixture and let it steep for about 10 to 15 minutes.
- 7. Soak the gelatin in cold water.
- 8. Squeeze the soaked gelatin well.
- 9. Dissolve the gelatin in the warm cream.
- 10. Pour the cream through a fine sieve to remove solid ingredients.
- 11. Pour the liquid into bowls.
- 12. Place the bowls in the refrigerator for about 3 hours.
- 13. Peel the pineapple and the mango.
- 14. Cut the fruit into small cubes.
- 15. Add 50 grams of sugar to a pot.
- 16. Caramelize the sugar over low heat.
- 17. Add the pineapple and white wine as soon as the sugar starts to melt.
- 18. Let the mixture simmer for about 3 minutes.
- 19. Add the mango and the butter.
- 20. Continue cooking the mixture for approx. 2 minutes.
- 21. Let the fruit mixture cool down.
- 22. Serve the panna cotta with the exotic fruits in a glass.
