🍳 Crispy Tomato and Mozzarella Paninis

Ingredients
- vine tomatoes 2 pcs.
- mozzarella 1 pcs.
- olives, green 40 g
- tomatoes, dried 40 g
- basil, fresh 10 g
- rolls 4 pcs.
- olive oil 5 tbsp
- salt pinch
- pepper, black ground pinch
Instructions
- 1. Thoroughly wash the fresh tomatoes under running water.
- 2. Remove the tough stems from the tomatoes.
- 3. Slice the tomatoes into thin, even rounds.
- 4. Let the mozzarella drain well in a sieve.
- 5. Cut the mozzarella into 8 thin slices.
- 6. Place the olives in a sieve and let them drain.
- 7. Slice the olives thinly.
- 8. Roughly chop the sun-dried tomatoes.
- 9. Wash the fresh basil leaves.
- 10. Shake the basil dry.
- 11. Carefully pluck the leaves from the stems.
- 12. Slice the buns lengthwise.
- 13. Drizzle some olive oil onto the inner sides of the buns.
- 14. Top the bottom bun halves with the fresh tomato slices.
- 15. Place the mozzarella slices on top.
- 16. Distribute the olives over the cheese.
- 17. Add the chopped sun-dried tomatoes.
- 18. Place the basil leaves on top.
- 19. Season everything to taste with salt and pepper.
- 20. Cover the filling with the top bun halves.
- 21. Heat 1 tablespoon of olive oil in a pan over high heat.
- 22. Place the paninis into the hot pan.
- 23. Fry the buns for about 5 minutes until golden brown.
- 24. Press the paninis down slightly with a spatula while frying.
- 25. Turn the buns and fry the other side until golden brown as well.
