  1. 1. Thoroughly wash the fresh tomatoes under running water.
  2. 2. Remove the tough stems from the tomatoes.
  3. 3. Slice the tomatoes into thin, even rounds.
  4. 4. Let the mozzarella drain well in a sieve.
  5. 5. Cut the mozzarella into 8 thin slices.
  6. 6. Place the olives in a sieve and let them drain.
  7. 7. Slice the olives thinly.
  8. 8. Roughly chop the sun-dried tomatoes.
  9. 9. Wash the fresh basil leaves.
  10. 10. Shake the basil dry.
  11. 11. Carefully pluck the leaves from the stems.
  12. 12. Slice the buns lengthwise.
  13. 13. Drizzle some olive oil onto the inner sides of the buns.
  14. 14. Top the bottom bun halves with the fresh tomato slices.
  15. 15. Place the mozzarella slices on top.
  16. 16. Distribute the olives over the cheese.
  17. 17. Add the chopped sun-dried tomatoes.
  18. 18. Place the basil leaves on top.
  19. 19. Season everything to taste with salt and pepper.
  20. 20. Cover the filling with the top bun halves.
  21. 21. Heat 1 tablespoon of olive oil in a pan over high heat.
  22. 22. Place the paninis into the hot pan.
  23. 23. Fry the buns for about 5 minutes until golden brown.
  24. 24. Press the paninis down slightly with a spatula while frying.
  25. 25. Turn the buns and fry the other side until golden brown as well.
