  1. 1. Peel the potatoes and wash them thoroughly.
  2. 2. Cut the potatoes into small cubes.
  3. 3. Fill a pot with salted water and bring it to a boil.
  4. 4. Add the potato cubes to the boiling water.
  5. 5. Cook the potatoes covered for about 25 minutes until soft.
  6. 6. Drain the cooking water and let the potatoes drain in a sieve.
  7. 7. Wash the spinach and let it drain well.
  8. 8. Halve the onion and peel it.
  9. 9. Dice the onion into small pieces.
  10. 10. Heat 2 tablespoons of oil in a pot over high heat.
  11. 11. Sauté the onion cubes for about 2 minutes.
  12. 12. Add the drained spinach to the pot.
  13. 13. Let the spinach wilt for about 4 minutes.
  14. 14. Season the spinach with salt, pepper, and nutmeg.
  15. 15. Pat the tofu dry with a paper towel.
  16. 16. Cut the tofu into slices about 1 cm thick.
  17. 17. Drain the chickpeas in a sieve.
  18. 18. Reserve the soaking water from the chickpeas.
  19. 19. Use the chickpeas for another dish.
  20. 20. Fill a deep plate with breadcrumbs.
  21. 21. Pour the reserved chickpea water into a second deep plate.
  22. 22. Fill a third deep plate with flour.
  23. 23. Heat 3 tablespoons of oil in a pan over medium heat.
  24. 24. Coat the tofu slices first in the flour.
  25. 25. Dip the floured tofu slices into the chickpea water.
  26. 26. Coat the tofu slices finally in the breadcrumbs.
  27. 27. Press the coating lightly.
  28. 28. Fry the tofu sticks in the pan for about 4 minutes on all sides.
  29. 29. Remove the tofu sticks from the heat.
  30. 30. Let the tofu sticks rest covered until serving.
  31. 31. Serve the tofu sticks on plates.
  32. 32. Add the spinach and potatoes.
