🍽️ Crispy Breaded Potato Dumplings on Creamy Leek Sauce

Ingredients
- chives, fresh 20 g
- roasted onions 50 g
- leek 3 pcs
- mini potato dumplings 800 g
- salt pinch
- butter 6 tbsp
- wheat flour, Type 405 2 tbsp
- whipping cream 200 g
- pepper, black ground pinch
- breadcrumbs 50 g
Instructions
- 1. Fill a large pot with about 3 liters of water and add salt. Place the pot on the stove and bring the water to a boil. Cover the pot while the water heats up.
- 2. Thoroughly wash the chives under running water. Shake them dry to remove excess water. Cut the chives into fine rings.
- 3. Open the package of the fried onions. Crumble the onions into small pieces using your hands.
- 4. Take the leeks and cut them lengthwise. Clean the onions thoroughly to remove any dirt. Cut off the hard root base at the bottom.
- 5. Cut the cleaned leeks into thin rings. Wash the rings thoroughly one more time.
- 6. Add the potato dumplings to the boiling salted water. Cook the dumplings without a lid for about 10 minutes until they are done.
- 7. Remove the cooked dumplings from the water using a slotted spoon. Let them drain briefly. Place the dumplings on a large plate.
- 8. Melt 3 tablespoons of butter in a pot over medium heat. Add the leek rings to the melted butter. Sweat the leeks for about 3 minutes, stirring occasionally.
- 9. Dust the leeks with 2 tablespoons of flour. Stir everything well so that the flour mixes with the leeks.
- 10. Add the cream and about 200 milliliters of water to the pot. Bring the mixture to a boil.
- 11. Reduce the heat to low. Let the sauce simmer for about 6 to 8 minutes.
- 12. Season the sauce with salt and pepper to taste.
- 13. Heat 3 tablespoons of butter in a frying pan over medium heat.
- 14. Add the breadcrumbs and the crumbled fried onions to the hot butter. Stir constantly until the mixture is golden brown after about 2 minutes.
- 15. Turn off the stove. Add the potato dumplings to the pan. Toss the dumplings in the breadcrumb mixture until they are evenly coated.
- 16. Place the breaded potato dumplings on top of the creamy leeks. Sprinkle the dish with the prepared chive rings.
