  1. 1. Fill a large pot with about 3 liters of water and add salt. Place the pot on the stove and bring the water to a boil. Cover the pot while the water heats up.
  2. 2. Thoroughly wash the chives under running water. Shake them dry to remove excess water. Cut the chives into fine rings.
  3. 3. Open the package of the fried onions. Crumble the onions into small pieces using your hands.
  4. 4. Take the leeks and cut them lengthwise. Clean the onions thoroughly to remove any dirt. Cut off the hard root base at the bottom.
  5. 5. Cut the cleaned leeks into thin rings. Wash the rings thoroughly one more time.
  6. 6. Add the potato dumplings to the boiling salted water. Cook the dumplings without a lid for about 10 minutes until they are done.
  7. 7. Remove the cooked dumplings from the water using a slotted spoon. Let them drain briefly. Place the dumplings on a large plate.
  8. 8. Melt 3 tablespoons of butter in a pot over medium heat. Add the leek rings to the melted butter. Sweat the leeks for about 3 minutes, stirring occasionally.
  9. 9. Dust the leeks with 2 tablespoons of flour. Stir everything well so that the flour mixes with the leeks.
  10. 10. Add the cream and about 200 milliliters of water to the pot. Bring the mixture to a boil.
  11. 11. Reduce the heat to low. Let the sauce simmer for about 6 to 8 minutes.
  12. 12. Season the sauce with salt and pepper to taste.
  13. 13. Heat 3 tablespoons of butter in a frying pan over medium heat.
  14. 14. Add the breadcrumbs and the crumbled fried onions to the hot butter. Stir constantly until the mixture is golden brown after about 2 minutes.
  15. 15. Turn off the stove. Add the potato dumplings to the pan. Toss the dumplings in the breadcrumb mixture until they are evenly coated.
  16. 16. Place the breaded potato dumplings on top of the creamy leeks. Sprinkle the dish with the prepared chive rings.
