🍰 Pancakes with Cherry Curd

Ingredients
- Eggs 4 pcs.
- sugar 20 g
- vanilla sugar 20 g
- salt pinch
- wheat flour, Type 405 300 g
- baking powder 1 tsp
- milk 200 ml
- rapeseed oil 2 tbsp
- cherries in a jar 200 g
- quark 20 % fat in total 250 g
- sour cream 100 g
- honey 75 g
Instructions
- 1. Crack the eggs into a bowl and beat them with a hand mixer and whisk until fluffy, increasing in volume significantly. Gradually fold in sugar, vanilla sugar, salt, flour, and baking powder. Finally, stir in the milk until a slightly viscous batter forms.
- 2. Heat 1 tablespoon of oil in a pan over high heat and pour 2–3 tablespoons of batter for small pancakes into the pan. Cook for about 2–3 minutes until small bubbles form on the surface, then flip and cook for another 1 minute until golden brown. Repeat the process with the remaining batter.
- 3. Place the cherries in a sieve and let them drain. In a bowl, mix together the curd, sour cream, and 2 tablespoons of honey, then fold in the cherries. Drizzle the pancakes with the remaining honey and serve with the cherry curd.
