  2. 2. Mix flour, baking powder, sugar, vanilla sugar, and salt in a separate bowl.
  3. 3. Separate the eggs and set the yolks aside.
  4. 4. Whisk the egg yolks with the buttermilk and the melted butter from the pan.
  5. 5. Add the liquid mixture to the flour mixture and stir everything well.
  6. 6. Beat the egg whites in a clean bowl with a hand mixer until stiff.
  7. 7. Gently fold the beaten egg whites into the batter.
  8. 8. Let the batter rest for 15 minutes.
  9. 9. Halve a lemon and squeeze out the juice.
  10. 10. Peel the ginger and dice it finely.
  11. 11. Melt 3 tablespoons of butter in a pan.
  12. 12. Fry the ginger in the butter for about 1 minute.
  13. 13. Add honey and lemon juice and let the mixture cool down.
  14. 14. Peel the bananas and slice them thinly.
  15. 15. Toss the banana slices in the ginger-honey mixture.
  16. 16. Heat oil in a pan over high heat.
  17. 17. Place 2 tablespoons of batter for each pancake into the hot pan.
  18. 18. Cook the pancakes over low heat for about 2 minutes on each side until golden brown.
  19. 19. Keep the finished pancakes warm and repeat the process with the remaining batter.
  20. 20. Serve the pancakes together with the ginger bananas.
