🍰 Fluffy Pancakes with Spicy Ginger Bananas

Ingredients
- butter 90 g
- wheat flour, Type 405 200 g
- baking powder 1 tsp
- sugar 30 g
- vanilla sugar 20 g
- salt pinch
- eggs 2 pcs
- buttermilk 250 ml
- lemons 1 pcs
- ginger, fresh 50 g
- sunflower oil 3 tbsp
- honey 50 g
- bananas 2 pcs
Instructions
- 1. Melt 50 grams of butter in a pan over high heat.
- 2. Mix flour, baking powder, sugar, vanilla sugar, and salt in a separate bowl.
- 3. Separate the eggs and set the yolks aside.
- 4. Whisk the egg yolks with the buttermilk and the melted butter from the pan.
- 5. Add the liquid mixture to the flour mixture and stir everything well.
- 6. Beat the egg whites in a clean bowl with a hand mixer until stiff.
- 7. Gently fold the beaten egg whites into the batter.
- 8. Let the batter rest for 15 minutes.
- 9. Halve a lemon and squeeze out the juice.
- 10. Peel the ginger and dice it finely.
- 11. Melt 3 tablespoons of butter in a pan.
- 12. Fry the ginger in the butter for about 1 minute.
- 13. Add honey and lemon juice and let the mixture cool down.
- 14. Peel the bananas and slice them thinly.
- 15. Toss the banana slices in the ginger-honey mixture.
- 16. Heat oil in a pan over high heat.
- 17. Place 2 tablespoons of batter for each pancake into the hot pan.
- 18. Cook the pancakes over low heat for about 2 minutes on each side until golden brown.
- 19. Keep the finished pancakes warm and repeat the process with the remaining batter.
- 20. Serve the pancakes together with the ginger bananas.
