  1. 1. Dissolve the yeast in lukewarm water and sugar in a bowl.
  2. 2. Let the yeast mixture rest covered for about 10 minutes.
  3. 3. Add flour, semolina, and salt to the bowl.
  4. 4. Knead everything into a smooth dough.
  5. 5. Let the dough rise covered in a warm place for about 1 hour.
  6. 6. Wait until the dough volume has approximately doubled.
  7. 7. Peel the garlic in the meantime.
  8. 8. Finely chop the garlic.
  9. 9. Wash the basil.
  10. 10. Shake the basil dry.
  11. 11. Pluck the basil leaves from the stems.
  12. 12. Drain the anchovies.
  13. 13. Dice the anchovies coarsely.
  14. 14. Heat 1 tablespoon of olive oil in a pan over medium heat.
  15. 15. Fry the garlic and anchovies in the pan for about 1 minute.
  16. 16. Deglaze the pan with the tomato sauce.
  17. 17. Add the basil stems to the sauce.
  18. 18. Let the sauce simmer for about 15 minutes over low to medium heat.
  19. 19. Remove the basil stems from the sauce.
  20. 20. Season the sauce generously with salt and pepper.
  21. 21. Preheat the oven to 220 degrees Celsius with top and bottom heat.
  22. 22. Knead the dough once more briefly.
  23. 23. Roll out the dough with a rolling pin into a rectangle.
  24. 24. Place the dough on a baking sheet lined with baking paper.
  25. 25. Press indentations into the dough with your fingers.
  26. 26. Brush the dough generously with about 5 tablespoons of olive oil.
  27. 27. Pour the tomato sauce over the dough.
  28. 28. Bake the pizza for about 20 minutes in the oven.
  29. 29. Grate the Pecorino cheese finely.
  30. 30. Mix the grated cheese with breadcrumbs.
  31. 31. Distribute the cheese-breadcrumb mixture over the pizza.
  32. 32. Bake the pizza for another 15 minutes until golden brown in the oven.
  33. 33. Let the pizza cool down slightly.
  34. 34. Sprinkle the pizza with fresh basil.
  35. 35. Serve the pizza.
