🍕 Palermo Pizza – Sfinicone

Ingredients
- yeast, fresh 15 g
- water 350 ml
- sugar 1 tsp
- wheat flour, type 550 250 g
- semolina 50 g
- salt 1 tsp
- garlic cloves 2 pcs
- basil, fresh 20 g
- anchovy fillets in olive oil 25 g
- olive oil 50 ml
- cherry tomato sauce 1 kg
- pepper, black ground pinch
- pecorino 100 g
- breadcrumbs 4 tbsp
Instructions
- 1. Dissolve the yeast in lukewarm water and sugar in a bowl.
- 2. Let the yeast mixture rest covered for about 10 minutes.
- 3. Add flour, semolina, and salt to the bowl.
- 4. Knead everything into a smooth dough.
- 5. Let the dough rise covered in a warm place for about 1 hour.
- 6. Wait until the dough volume has approximately doubled.
- 7. Peel the garlic in the meantime.
- 8. Finely chop the garlic.
- 9. Wash the basil.
- 10. Shake the basil dry.
- 11. Pluck the basil leaves from the stems.
- 12. Drain the anchovies.
- 13. Dice the anchovies coarsely.
- 14. Heat 1 tablespoon of olive oil in a pan over medium heat.
- 15. Fry the garlic and anchovies in the pan for about 1 minute.
- 16. Deglaze the pan with the tomato sauce.
- 17. Add the basil stems to the sauce.
- 18. Let the sauce simmer for about 15 minutes over low to medium heat.
- 19. Remove the basil stems from the sauce.
- 20. Season the sauce generously with salt and pepper.
- 21. Preheat the oven to 220 degrees Celsius with top and bottom heat.
- 22. Knead the dough once more briefly.
- 23. Roll out the dough with a rolling pin into a rectangle.
- 24. Place the dough on a baking sheet lined with baking paper.
- 25. Press indentations into the dough with your fingers.
- 26. Brush the dough generously with about 5 tablespoons of olive oil.
- 27. Pour the tomato sauce over the dough.
- 28. Bake the pizza for about 20 minutes in the oven.
- 29. Grate the Pecorino cheese finely.
- 30. Mix the grated cheese with breadcrumbs.
- 31. Distribute the cheese-breadcrumb mixture over the pizza.
- 32. Bake the pizza for another 15 minutes until golden brown in the oven.
- 33. Let the pizza cool down slightly.
- 34. Sprinkle the pizza with fresh basil.
- 35. Serve the pizza.
