🍽️ Paleo Quiche with Leeks and Bacon

Ingredients
- almonds, ground 200 g
- salt pinch
- olive oil 6 tbsp
- eggs 2 pcs.
- leek 1 pcs.
- onions, yellow 1 pcs.
- bacon strips 125 g
- oat drink 200 ml
- pepper, black ground pinch
Instructions
- 1. Preheat the oven to 175 °C (top/bottom heat). In a bowl, mix the ground almonds, the salt, 4 tbsp oil, and 1 egg to form a dough. Place the dough in a greased quiche pan (28 cm diameter) and bake it for about 10–15 minutes.
- 2. Meanwhile, cut the leek lengthwise, remove the root, slice into thin rings, and rinse thoroughly in a sieve. Halve the onions, peel, and dice finely.
- 3. Heat 2 tbsp oil in a pan over high heat and fry the bacon strips for about 5 minutes. Add the leek and onions and fry everything for another approx. 3 minutes. In a bowl, mix the oat drink with the remaining egg, salt, and pepper.
- 4. Carefully remove the quiche crust from the oven. Distribute the bacon-leek mixture evenly over the crust and bake the quiche for another approx. 25–30 minutes in the oven. Then remove from the oven and serve warm or cold. Enjoy your meal!
