🍰 Paleo-Blueberry Cake

Ingredients
- blueberries, fresh 200 g
- bananas 2 pcs.
- eggs 3 pcs.
- almond drink 40 ml
- honey 4 tbsp
- olive oil 2 tbsp
- almonds, ground 260 g
- coconut flakes 40 g
- salt pinch
- baking powder 2 tsp
Instructions
- 1. Preheat the oven to 175 °C (top/bottom heat). Wash the blueberries and let them drain well. Peel the bananas and mash them in a bowl with a fork into a fine puree.
- 2. Add the eggs, almond drink, honey and oil and mix everything well. Add the ground almonds, coconut flakes, a pinch of salt and the baking powder and stir everything into a homogeneous mass. Gently fold the blueberries into the batter.
- 3. Line a loaf pan with baking paper, fill in the batter and bake it in the oven for about 60 minutes. Take the Paleo Blueberry Cake out of the oven and let it cool slightly. Enjoy!
